Cranberry and Cilantro Quinoa Salad

Made this recipe EXACTLY as written and it was delicious! That said, it is also a very versatile recipe and I am looking forward to experimenting with other fruits and vegetables. A great recipe for using up your garden produce.

Martha's Vegetable Beef Soup

The only reason I am not giving this recipe five stars is because husband thought it was "too tomatoey". Next time I will leave out the tomato sauce. I used beef broth instead of water, a 12 oz package of frozen soup vegetables and added extra potatoes. Leftovers the next day were fabulous!

Chocolate Zucchini Bars

The reason I am giving this four stars instead of five is because it came out a little dry. I had to keep extending the time because the center took longer to bake, thus making the outside dry. I will try this recipe again and use a pan larger than 9x13.

Chicken Puffs

These puffs received hearty approval at my house. I baked them in a muffin tin rather than on a baking sheet so my husband thought they were little pot pies. This observation gave me the idea of adding some frozen vegetables to the mixture next time. I also brushed the puffs with olive oil and then sprinkled on butter buds and Mrs. Dash garlic and herb blend. Delicious!

Creamy Kielbasa and Potato Soup

Since German food is traditionally somewhat bland I knew that I would have to give this receipe a little extra kick to satisfy my husband's palate. I just used items that I had on hand and followed suggestions of some of the other reviewers by adding vegetables, seasonings, and cheese. I didn't have kielbasa so substituted bratwurst. I also added a little bit of thyme and did not spare the white pepper. Added a side of homemade applesauce and it made a very hearty meal that my husband dubbed VERY GOOD. Bottom line: this is a very good recipe to play around with until it satisfies your taste!

Hearty Corn Chowder

Made this recipe to use up leftovers from Dave's Low Country Boil (recipe on this site). It was hearty and delicious. My husband also liked it which is a big plus in our household. The only reason I am giving it four stars instead of five is because I have another corn chowder recipe that I like just a little bit better.

Cranberry Walnut Oatmeal Cookies

I am giving this recipe four stars only because the cookies are "not quite" as good as the preformed ready-to-bake ones that I have bought from fundraisers. They were, however, delicious and disappeared quickly. I am keeping the recipe.

Independence Day Cookies

Delicious cookies that disappeared quickly. My dough seemed too dry to form the cookies so I added a tablespoon or two of milk and they came out beautifully. As someone else stated, the juice in the fruits keeps them nice and moist. Will definitely be making again.

Colleen's Slow Cooker Jambalaya

My husband, who is always the skeptic when trying new recipes, declared that this better be as good as the jambalaya he had in New Orleans - and he had to admit that it was!! This recipe is definitely a keeper. The only change I made was to add about three small cloves of fresh garlic from my garden. Delicious - I ate it for lunch all week!

Quinoa and Black Beans

I love this stuff! I cook up a batch on the weekend and then take it for lunch during the week. Makes me feel like I'm eating something really healthy and yummy too. Hint: I add a little broth before reheating it in the microwave so that it doesn't taste too dry.

Lemony Quinoa

Sorry, but I can't imagine this being acceptable to most kids or picky husbands. In an effort to salvage what was leftover I added a chopped apple, sliced grapes, light mayonnaise, and some chunked chicken breast for a delicious chicken salad.
