Pesto Chicken Florentine

Good. I found this under healthy recipes but the Alfredo isn't healthy at all. I used the Alfredo packets (McCormick) as instructed. I used high protein spiral noodles and Kirkland rotisserie chicken. Would love to find a better healthier Alfredo that isn't chock full of sodium and think I would be more in love with the recipe if I did. If you are not watching what you eat and you know of a kick butt alfredo recipe then you will love this!

Healthy Banana Cookies

Loved it - reminds me of banana bread bites... only reminded me of a cookie in shape only. I read the reviews and I have to add - QUIT thinking these are cookies. Do not bring a platter of them to a party, do not make them for your bakesale and by all means do not bring these to a cookie exchange. The lack of sugar, flour and fat should be an indication that you will be setting yourself up for disappointment. If you want cookies, make cookies with all the fat and sugar you want. If you are looking for a healthy breakfast or snack alternative these were delish!! I subbed 1/2 cup dried chopped dates for fresh that I further chopped in my processor. I also subbed 2.5 TB coconut oil for the veg oil and added 1 tb of triple seed mix (hemp, chia, flax) & a shake of cinnamon. I cannot wait to make these "bites" again.

Garlic Chicken with Orzo Noodles

I made this as is and loved it. Easy to make and no crazy ingredient to buy. A little on the spicy side for my little ones but surprisingly they ate it up. 2 thumbs up.

Salsa Chicken Rice Casserole

I don't agree at all with the reviews that said it was bland - just use a salsa with more kick or a different brand altogether. I have made this a quite a few times. I have used different brands each time & I do prefer it made with certain salsas such as Jack's or Tostitos. All my super picky ones ate this, had seconds and even told me how good it was. I would recommend putting the chicken in the food processor after cutting to make the chicken smaller and more shredded - like just a few pulses. I also sautéed the onion in butter to make it more tender. I use Basmati rice which I prefer over plain white in this recipe.

Hoagie Bake

A winner! I am always looking for easy recipes as I am dieting an finding myself most nights making two separate dinners. I made as-is except all I had on me is turkey and ham and my two picky eaters gobbled it up and it wasn't greasy at all. I also halved the recipe by using one tube of 8 large crescents. 4 on top and 4 on bottom of pan. That worked out for 3 people eating it. No leftovers. Will definitely make again.

Debdoozie's Blue Ribbon Chili

So Easy and delicious! The only thing I changed was 93% ground turkey but everything else exactly the same. I made this mid-morning and put in the crockpot on simmer until dinnertime. This is a must have, no muss no fuss recipe. 2 thumbs up! Thanks for sharing Deb!

Grilled Peanut Butter and Banana Sandwich

Perfect breakfast for kids who won't eat breakfast. Sprinkled a little cinnamon over bananas. May add a little honey next time. used butter vs spray for more flavor. Kid approved.

Gooey Butter Cookies

I call them plain Jane's - they look meh & are hiding the fact they really are Delicious, very rich, soft easy to make cookies in disguise. Used butter yellow cake mix and put dough in fridge overnight but dough was still super sticky. DON'T USE a cookie scoop!! wow it made for sticky mess and I nearly gave up. Had better results using my fingers to take a large pinch of dough, roll into a ball then plopped the ball into a bowl with powdered sugar and used my finger to roll around. Used parchment and cookies came out perfect. This would make an easy cookie exchange cookie if you need whip something up. I will definitely plan on making them every Christmas from now on. remember to ditch that cookie scoop this time!

Barbie's Tuna Salad

This is the only tuna salad that the whole family will eat. Just delicious. I do add 2-3 egg whites for extra protein. I love eating this with crackers. I have no desire to search for another tuna salad recipe. Thanks for sharing!

Restaurant Style Chicken Nachos

Sooo good & easy to make. I made this for a light dinner one night. The only change I made was using a large can of canned white chicken rinsed well. I used frontera green salsa which blended well with the other ingredients esp the garlic. My only addition was healthy avocados diced on the side before serving. I have been craving this practically every night for dinner since the first time I made it. A keeper!

Easy White Chicken Enchiladas

Sorry, not a fan. Very easy to throw together but as another reviewer stated I also felt The queso was off-putting. I also felt the texture was mushy and artificial and salty tasting due to all the processed ingredients. Just felt there was a little too much fat going on between the cream cheese, sour cream, cheese & queso and all of them together was not to my liking. I much prefer the spinach enchiladas from this site.

Ground Turkey Casserole

Super easy & tasty and even my super picky eaters ate it. Had to use what I had on hand. Subbed cottage cheese for half the cream cheese (loved it that way and would do it again). Used extra lean turkey & only 1 cup shredded cheese cuz that is all I had. I only had high protein elbow macaroni so I used only half a box which was plenty, almost too much but because I used less than the amount of noodles called for I didn't get a dry result. The only addition I made was sautéed garlic to the tomato sauce. Turns out that the way I made it was pretty healthy too. Will definitely make again - may try it w/ a side of brown rice or quinoa instead of noodles.

Spinach Enchiladas

Excellent except I am having an issue w/ the sauce. maybe I haven't found the right one. Kids find the preferida red mild one I have always used too spicy & refuse to eat it. I have topped theirs w/ just a little ketchup & bake separately. I have to admit that I am not a fan of this canned sauce either. Will start experimenting with other brands. So other than our canned enchilada sauce issue, the recipe is great, I always make as written.

Sweet Potato Chili

Excellent!!!!! The best chili I have ever made or ate!! Used all turkey and only 1 of the cans of tomatos had chili seasonings so overall it was tasty w/o being too spicy for the kids. They are normally picky but ate this. I served green Tabasco on the side for the adults who needed more of a kick. Very Yummy! Just be sure to start it well ahead of time.

Baked Oatmeal II

This was incredible and easy to make! I was expecting a dry bar. I slightly underbaked and ended up w/ a warm crumbled delight. The only change was that I used fruit bits instead of cranberries because it's all I had on hand. Liked by both adults & kids. I put a little Vanilla almond milk over it to eat. 2 thumbs up.

Baked Omelet Roll

Been making this for 15 years and finally learned a few tricks to making this work. No more scraping my glass pans & ending up w/ an ugly roll that is half stuck to the pan. Now I Use large cookie sheet lined with parchment paper. It rolls up beautifully w/ no mess to clean. I also only bake at 400 or 425 for less time. Lastly I use 1/2 water, 1/2 half n half instead of the milk & add a few shakes of dry mustard to the mixture. Now I end up w/ a beautiful & tasty roll I am proud to present.

Instant Pistachio Salad

I have made this at Potlucks, bbq's and even Christmas Dinner - not only is it yummy but it is super easy & affordable to make. It is not overly sweet so it seems to please both the kids & adults. I did not drain the can of pineapple either. I also made it about 7 hours before eating it and it was perfection. Just be sure to only use 1/2 bag of marshmallows. Last time I threw in a whole bag not thinking and the balance was definitely off.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

Super easy to make but it was not a hit in our house. I thought it was salty ( I am not a salt person at all) and the kids for whatever reason would not eat it. DH didn't have to much to say so unless I get some real raves I don't see the point in making again. However I definately say it's worth a try! The only change was that I used the fast & friendly meatballs recipe on this site instead of prepacked.
