Grilled Peanut Butter and Banana Sandwich

Perfect breakfast for kids who won't eat breakfast. Sprinkled a little cinnamon over bananas. May add a little honey next time. used butter vs spray for more flavor. Kid approved.

Gooey Butter Cookies

I call them plain Jane's - they look meh & are hiding the fact they really are Delicious, very rich, soft easy to make cookies in disguise. Used butter yellow cake mix and put dough in fridge overnight but dough was still sticky. No biggie – just used a cookie scoop, plopped the ball into a bowl with powdered sugar and used my finger to roll around. Used parchment and cookies came out perfect. This would make an easy cookie exchange cookie if you need whip something up. I will definitely plan on making them every Christmas from now on.

Barbie's Tuna Salad

This is the only tuna salad that the whole family will eat. Just delicious. I do add 2-3 egg whites for extra protein. I love eating this with crackers. I have no desire to search for another tuna salad recipe. Thanks for sharing!

Restaurant Style Chicken Nachos

Sooo good & easy to make. I made this for a light dinner one night. The only change I made was using a large can of canned white chicken rinsed well. I used frontera green salsa which blended well with the other ingredients esp the garlic. My only addition was healthy avocados diced on the side before serving. I have been craving this practically every night for dinner since the first time I made it. A keeper!

Easy White Chicken Enchiladas

Sorry, not a fan. Very easy to throw together but as another reviewer stated I also felt The queso was off-putting. I also felt the texture was mushy and artificial and salty tasting due to all the processed ingredients. Just felt there was a little too much fat going on between the cream cheese, sour cream, cheese & queso and all of them together was not to my liking. I much prefer the spinach enchiladas from this site.

Ground Turkey Casserole

Super easy & tasty and even my super picky eaters ate it. Had to use what I had on hand. Subbed cottage cheese for half the cream cheese (loved it that way and would do it again). Used extra lean turkey & only 1 cup shredded cheese cuz that is all I had. I only had high protein elbow macaroni so I used only half a box which was plenty, almost too much but because I used less than the amount of noodles called for I didn't get a dry result. The only addition I made was sautéed garlic to the tomato sauce. Turns out that the way I made it was pretty healthy too. Will definitely make again - may try it w/ a side of brown rice or quinoa instead of noodles.

Spinach Enchiladas

Excellent except I am having an issue w/ the sauce. maybe I haven't found the right one. Kids find the preferida red mild one I have always used too spicy & refuse to eat it. I have topped theirs w/ just a little ketchup & bake separately. I have to admit that I am not a fan of this canned sauce either. Will start experimenting with other brands. So other than our canned enchilada sauce issue, the recipe is great, I always make as written.

Sweet Potato Chili

Excellent!!!!! The best chili I have ever made or ate!! Used all turkey and only 1 of the cans of tomatos had chili seasonings so overall it was tasty w/o being too spicy for the kids. They are normally picky but ate this. I served green Tabasco on the side for the adults who needed more of a kick. Very Yummy! Just be sure to start it well ahead of time.

Baked Oatmeal II

This was incredible and easy to make! I was expecting a dry bar. I slightly underbaked and ended up w/ a warm crumbled delight. The only change was that I used fruit bits instead of cranberries because it's all I had on hand. Liked by both adults & kids. I put a little Vanilla almond milk over it to eat. 2 thumbs up.

Baked Omelet Roll

Been making this for 15 years and finally learned a few tricks to making this work. No more scraping my glass pans & ending up w/ an ugly roll that is half stuck to the pan. Now I Use large cookie sheet lined with parchment paper. It rolls up beautifully w/ no mess to clean. I also only bake at 400 or 425 for less time. Lastly I use 1/2 water, 1/2 half n half instead of the milk & add a few shakes of dry mustard to the mixture. Now I end up w/ a beautiful & tasty roll I am proud to present.

Instant Pistachio Salad

I have made this at Potlucks, bbq's and even Christmas Dinner - not only is it yummy but it is super easy & affordable to make. It is not overly sweet so it seems to please both the kids & adults. I did not drain the can of pineapple either. I also made it about 7 hours before eating it and it was perfection. Just be sure to only use 1/2 bag of marshmallows. Last time I threw in a whole bag not thinking and the balance was definitely off.

Anna's Amazing Easy Pleasy Meatballs over Buttered Noodles

Super easy to make but it was not a hit in our house. I thought it was salty ( I am not a salt person at all) and the kids for whatever reason would not eat it. DH didn't have to much to say so unless I get some real raves I don't see the point in making again. However I definately say it's worth a try! The only change was that I used the fast & friendly meatballs recipe on this site instead of prepacked.

Spicy Bean Salsa

Super addictive. A healthy change from fatty cream cheese or greasy meat appetizers. Only changes is I added cilantro & green onion then chopped avocado right before serving. Do Make well ahead of time so it melds together. I use 3/4 cup of Newmans Family recipe italian dressing & it's fantastic. I am not a fan of Kraft's zesty chemical italian for anything so that is why I personally would not use it. This makes a ton and is filling, after all it's beans so it's perfect to use for large crowds. If there are leftovers I wrap in tortillas w/ a little shredded cheese or on a taco salad. One of the best appetizer recipes on the site.

Best healthy bar recipe on this site. Was scared of dry & over baked bars so only baked for 20 min & then they sat in the pan for 10 min. Only changes - Used motts no sugar blueberry applesauce & only a half cup of dates & dried cranberries. came out chewy, tasty & delish. So much so I have no desire to look for other recipes like this. Thx for sharing!

Absolutely delicious! So healthy & Super easy to make. I am recently off sugar and would now choose to make these instead of a batch of cookies. Would suggest unsweetened coconut if you can find it. I made this into balls w/ my cookie scoop and they were not as sticky as I anticipated. I plan to double the recipe next time. Be careful if you are watching your calories - only pop a few balls a day! I can see these being addictive for sure.

Fluffy Pancakes

I haven't had pancakes in about 4 years. Was tired of all the tough, dry, artificial tasting pancakes from boxes & diners. This recipe has changed my mind. Delicious & easy to make - fluffy, a little sweet & fresh. I sleepily found all the ingredients in my pantry. If u have also given up on pancakes you have to try this.
