Chicken Tortilla Soup V

Both my husband and I loved this! Very easy. For the salsa i used canned fire roasted style diced tomatoes. I had frozen chicken and cooked it separately then added it when it was ready. I also had celery and cactus/nopal on hand so I added those. Topped with some cheese and avocado, yum.

Best-Ever Texas Caviar

I really like that this recipe made it's own dressing. However, the sugar was way too much for me - came out way too sweet. I would cut the sugar in half next time. I also like it less beany so I left out a can of beans, and used black eyed peas instead of pinto.

Slow Cooker Italian Chicken Alfredo

My husband loved this! I used cream of mushroom instead of cream of chicken, put in more garlic bcs I love it, and added frozen spinach. I did not add any salt and it did not need it at all. I also used the amount of water indicated and it was perfect. Will definitely be making it again

Braised Balsamic Chicken

Served with rice and side of broccoli. The balsamic was a tad too sweet for my husband, but that may be bcs I scaled the recipe down. I thoroughly enjoyed it and will be making it again!

Addictive Sweet Potato Burritos

Will make again! My picky meat-lover husband loved them! I used canned yams, and mix of black and kidney beans. Also added a little cinnamon. DO NOT use all the water the recipe states, just use what you need for the right consistency. I topped these with sour cream (actually Cream Mexicana) and that is the cherry on the top!

Chicken With Mushrooms

Tasty! The only deviations I made were, adding some poultry seasoning to the chicken and sauteing the mushrooms as some reviewers mentioned. I did thought the gravy was just delicious with the broth (did not see the need to add cream of mushroom). Thanks for the basic recipe, I'll be making it again.

Cool Summer Cucumber and Tomato Toss

Very tasty. My husband, not a huge veggie lover, was really a fan too! I added red onion, garlic, green bell pepper and parmesan cheese. The onion really gave it a good kick, and I liked the bell pepper for the variety. I didn't feel the cheese did much, will not add it next time.

Garlic Chive Chicken

Delicious! I used spaghetti pasta and 5 chicken breast tenders (which is more like 1/2 the amount of chicken the recipe calls for). With less meat, the amount of sauce was sufficient. I will make it again, though I will add some seasoning on the chicken next time to give it a little more taste.

Hearty Ham Pie

It needed a dash of salt on our dinner plate, but other than that was perfect! I added celery, and used fat free half and half to cut back on the fat. I also used a frozen pie shell. I can't wait to make this again!! Even my picky husband gave it 4 stars!

Mexicali

This was pretty good, especially for how easy it is. I omitted the chile peppers since they weren't on hand. I added bell peppers. I also added some potato because i had it left over. I only put about 1/3 of the tortillas ontop of the chicken, bcs i didn't want it too mushy. The rest of the tortilla strips I put on top, and topped that with the cheese. This added a wonderful crisp! My husband said he would have liked it with beef instead of chicken - i might try that next time!

Mini Meatloaves

3.5 I made it as directed, except in a muffin pan. I used another reviewer's tip of letting the oatmeal/milk mix sit for a bit to soak up some slushiness. The sauce was WAY too sweet, I would definitely cut back on the sugar! It also lacked spice, I will definitely add onion and spices if I make again.

Chicken Tetrazzini for a Crowd

3.5 This was pretty good, but not a Wow recipe. I did make some modifications: I scaled this recipe down on the website, and used some low fat ingredients for health. I used 1 crm of mushroom and 1 crm of celery. Because I like veggies I added some onion, celery, and bell pepper which I sauteed with garlic. And I couldn't resist adding a bit of sherry as others suggested. I did reserve some of the cheese for the top, and added crushed crackers on top of that - this provided a crust which was the best part of the dish. I will probably make again, but I'll try to snaz it up some.

Slow Cooker Latin Chicken

Only minor changes: I used 1 can of beans, and chicken breast tenders. Mine took a lot longer to cook, until I finally turned it up on high. I really liked the taste the allspice gives it. The sweet potatoes were fantastic - my daughter loved it! My other picky eater (husband) said he liked it, would eat it again, but only thought it was worth 3 stars.
