Simple Turkey Chili

Yum! One of the best Chili recipes I've tried. You can't tell its made with turkey. Do add extra beans and bell pepper. Since there are only two of us I froze the leftovers and it still tasted great when thawed and reheated. Thanks for the recipe.

Sun-Dried Tomato Chicken,Spinach and Artichoke Pasta

Thank you thank you thank you Madball! This is amazing. Hubby could not stop raving about it. I did add a few things: one cut-up boiled chicken breast, one can of chopped drained artichoke hearts, red wine and fresh chopped garlic to the tomato-broth soak (the juliened sundried tomatoes in a 3oz pkg. from Trader Joes was the perfect amount). The only pasta I had on hand was bowtie. It worked great. Thanks again and also thanks for the suggestions from other raters.

Spinach and Sun-Dried Tomato Pasta

Fish Chowder

The only changes I made were to add a lot more mushrooms. I halved the recipe for just my husband and me. It was only okay the first meal but tasted much better when we had it the second night (even halved it makes a lot). If I make it again I will use less flour as it was a little too thick and slightly "flourie"tasting which I didn't notice the second time around. Next time I will add clams and maybe some shrimp too. It needs a little more spice, but I don't know what that would be...pepper? garlic?

American Potato Salad

I get rave reviews with the following changes: omitted the bell pepper: increased the eggs to one dozen: mixed the mayonaise with 1 Tblsp salad vinegar: 1 Tblsp sugar: 1 tsp Lawrys seasoning salt: 1/3 cup sweet pickle relish; 1/2 tsp black pepper. Added all to potatoes, celery, and (sweet) onions. This is how I always make potato salad and it never fails to get compliments and eaten up.

Slow-Cooker Chicken Tortilla Soup

This is the exact same recipe from one of my slow cooker cookbooks. It is perfect as is, but I think I wlll try some of the ratings suggestions next time. I just use store-bought tortilla chips for a topping along with cheddar or mexican cheese and some chopped onions, preferably Vidalias.

Blueberry Zucchini Bread

Killer good! I made it exactly to the recipe and my husband was crazy about it. I will make it again--maybe substitute half the oil with applesauce next time and try frozen blueberries when I can't get fresh in the winter.

Lemon Pepper Cod

Best Spanish Rice

I made this exactly to the recipe and found it pretty bland. Next time I will kick it up some....maybe it needs more salsa or some chopped peppers or something. It would be a good base for a chicken casserole. I served it to 8 people along with chicken enchiladas and I got no comments on it, maybe because my enchiladas are so killer good that the rice paled by comparison!
