Taco Seasoning III

Reviewed: Aug. 27, 2009
Like most others, I made this in a pinch when I had all the fixin's for tacos except the seasoning. I didn't have Oregano, or a whole cup of Chili Powder, or the patience to measure out the rest. A little of everything, plus I added some Cayenne pepper for more heat and it tastes just like the packet, if not better! Just threw a bit with some water on top of my browned ground turkey, couldn't have been easier. No way I'm going to buy those packets again.

The Best Cheeseball

Reviewed: Dec. 20, 2009
I made this as the top half of a snowman and the bottom half a ranch flavored cheeseball, and everyone devoured it through the night. I only used one package of cream cheese but still plenty of pepperjack and cheddar and it was a good consistency. it also tasted better when I put it out the next day and the jalapeno had a chance to settle in.

Easy Cheese Ball II

Reviewed: Dec. 20, 2009
Easy is right, and so good! I made this as the bottom half of a snowman for my Christmas party (a smaller ball with jalapenos for the top) and my guests couldnt stop picking at it. Served with lightly salted pita chips, yum!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 20, 2009
I never made or had stuffing with sausage, man was I missing out! This mix with the apples and craisins was so good, I was bummed that my family thought it was good too and I barely had any leftovers. I'm going to need to make this again even though it's not Thanksgiving.

Mustard Crusted Tilapia

Reviewed: Jan. 13, 2010
Yum! I've always been a little apprehension when cooking fish, but this recipe changed me. I used frozen tilapia filets and was very liberal with the measurements (as well as the cook time), and it was delicious. I took the advice of other reviewers and sprayed the top of the fish with pam before cooking. I also did not have fresh lemon so I used white wine vinegar. My mixture wound up not being a paste, so it spread on smoothly. I topped with seasoned Panko and broiled for a couple minutes after cooking to really brown up the top. I will definitely make this again, so easy and tastes so good.

BBQ Chicken Calzones

Reviewed: Jun. 1, 2010
I love a good BBQ Chicken Pizza, you can't go wrong with this recipe for the calzone version. I put two chicken breasts basted with BBQ sauce in the slow cooker with a can of low sodium chicken broth and about a cup of bbq sauce floating in the broth. When it was time to eat I carmalized about half a large red onion, thinly sliced in a Tbs of olive oil and shredded the chicken -- so moist and shreddable out of the cooker, then put it all together. I didn't have mozz on hand, so I used Colby-Jack, which I thought went better anyway. Yummm.

Hot Spiked Cider

Reviewed: Dec. 20, 2009
I made this for a Christmas party and it was a big hit. I nearly tripled the recipe (4 cups of rum!) and it was all gone by the end of the night. It's definitely a too strong for my taste, I would cut down on the tea and way up the cider so it tastes more cider-y. I also didn't put the butter in the cups, but I did add about 2 tablespoons into the pot, though I don't think that was necessary because it wound up leaving a film on the top.

Basil and Pesto Hummus

Reviewed: Jun. 1, 2010
I bought a bag of pita chips and needed something to dip them in. Plus my basil plant needed a bit of a trim. This recipie was a winner! I had all the ingredients on hand and it whipped up pretty quickly. There is definitely not enough liquid in this recipe, though. I put in closer to 4 or 5 tablespoons of olive oil and twice as much balsamic and soy, and still streamed into the food processor probably close to 1/4 cup of water. (I never measure anything..) I also added a splash of lemon juice and some red pepper flakes because as written, this is definitely missing *something*. I am definitely happy I decided to make this, it was the perfect dip to my chips.
