BBQ Chicken Calzones
I love a good BBQ Chicken Pizza, you can't go wrong with this recipe for the calzone version. I put two chicken breasts basted with BBQ sauce in the slow cooker with a can of low sodium chicken broth and about a cup of bbq sauce floating in the broth. When it was time to eat I carmalized about half a large red onion, thinly sliced in a Tbs of olive oil and shredded the chicken -- so moist and shreddable out of the cooker, then put it all together. I didn't have mozz on hand, so I used Colby-Jack, which I thought went better anyway. Yummm.

Basil and Pesto Hummus
I bought a bag of pita chips and needed something to dip them in. Plus my basil plant needed a bit of a trim. This recipie was a winner! I had all the ingredients on hand and it whipped up pretty quickly. There is definitely not enough liquid in this recipe, though. I put in closer to 4 or 5 tablespoons of olive oil and twice as much balsamic and soy, and still streamed into the food processor probably close to 1/4 cup of water. (I never measure anything..) I also added a splash of lemon juice and some red pepper flakes because as written, this is definitely missing *something*. I am definitely happy I decided to make this, it was the perfect dip to my chips.

Mustard Crusted Tilapia
Yum! I've always been a little apprehension when cooking fish, but this recipe changed me. I used frozen tilapia filets and was very liberal with the measurements (as well as the cook time), and it was delicious. I took the advice of other reviewers and sprayed the top of the fish with pam before cooking. I also did not have fresh lemon so I used white wine vinegar. My mixture wound up not being a paste, so it spread on smoothly. I topped with seasoned Panko and broiled for a couple minutes after cooking to really brown up the top. I will definitely make this again, so easy and tastes so good.
