we make this all the time -- you do not have to put sugar -- it is already sweet enough without it... we throw a little nutmeg in it also when getting ready to simmer...... let it simmer for at least 2-3 hours... then cool at least 30 minutes before adding everclear........

made this a bunch of times over the year.. very good dip for parties.. I however eliminate the black pepper & season the horseradish to taste for a little more kick... tons of compliments on this & lasts for awhile in fridge..

Baked Snapper with Mandarin Oranges, Cashews and Ginger

liked the idea of the combination of ingrediants.. not enough sauce to cook the fish in to keep from getting dry.. we used mangrove snapper freshly caught from here in the gulf -- maybe I would try again but I would season fish first with cajun seasonings & eliminate red pepper. depending on how big/much fish fillets you were cooking, double the liquids........

ok but a little bland for my taste being from the south.. I use cornbread instead of bread crumbs,.. I also substitute tony's c or Zataran's seasoning instead of regular black pepper..

South Jersey Oyster Pie

a good base start.... I added a lot of seassonings & spices (cayenne, tony's C seasoning, etc.) being from New Orleans to make it taste more how we cook down here.. It you dont doctor it up, found it too bland for my taste from the South..

Grilled Filet Mignon with Gorgonzola Cream Sauce

Found this to be a very good basic recipe.. I had leftover crawfish left from a seafood boil that I added to it so eliminated the black pepper totally since would be crawfish were spicy & I used blue cheese crumbles for the cheese.

being from New Orleans also, I think this is a great basic sauce... I would recommend however that if you are using left over crawfish from a seafood boil, eliminate the crab boil & cajun seasoning totally. If will be hot enough if it was from a seafood boil.
