Peanut Butter Frosting

Reviewed: Jan. 7, 2002
I have been on the hunt for the perfect peanut butter frosting, and from reading the reviews for this, I thought I had found it. However, my search will continue. I was not impressed with this recipe at all. I needed to add MUCH more milk (I had no cream in the house) than the recipe called for. After the first cup, I added 1/3 cup as stated, but after every half cup, I needed to add a healthy splash of milk to make the frosting spreadable. I used two and a half cups, and found that it did make enough to frost my two layer cake, with some left over, however, I didn't like the taste at all. Too much butter, not enough peanut butter, perhaps milk should not be substituted for the cream? I'm not sure, but like I said, the search will continue.

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Reviewed: Jan. 7, 2002
Wow, this cake is EXCELLENT!! I'm not a big chocolate lover, and made this for my husband, but ended up eating as much as he did!! I made the double layer, and instead of the chocolate frosting, I used peanut butter and this was incredible!! Please note, maybe it was just my oven, but the cake was done after 23 minutes, so be careful not to overbake. It came out moist and wonderful!! This cake will be made over and over in my house!!

Rotini and Chicken Casserole

Reviewed: Dec. 29, 2001
We weren't impressed with this recipe at all. It is very bland, and incredibly dry. It requires much more milk than the recipe calls for, and it is definitely not cheesy enough. Luckily, I put some crushed croutons on top before I baked it, or there would have been no flavor at all. I wouldn't recommend this recipe.

Joey's Peanut Butter Cookies

Reviewed: Dec. 26, 2001
These cookies were very good. I served them at a Christmas party and everyone loved them. I didn't really have any of the problems with the batter, as I read in other reviews, other than the fact it was ever so slightly crumbly, but not enough to bother me. They taste good and the only recommendation I would make would be to put some sugar on the top before baking, as I think that is what makes a peanut butter cookie. This one will go in my permanent file.

White Russian Brownies

Reviewed: Dec. 18, 2001
I must say, since white russians are my drink of choice, I couldn't wait to try this recipe. I'm sorry to say that I think it's awful. I used an 8X8 pan instead of a 9X9, and I barely had enough chocolate to cover the bottom of the pan, let alone to split in half. And the cream cheese layer was HUGE, entirely too much. Perhaps if the taste were more balanced, but you really need more chocolate to be able to call this a brownie, it consists mostly of the cream cheese. It is very sticky and gooey and stuck to the pan, despite greasing and flouring. I'll never make this again.

Creamy Chicken and Rice

Reviewed: Dec. 11, 2001
We thoroughly enjoyed this meal! I substituted crushed parmesan flavored croutons for the crackers and added a bit of cayenne, as my husband likes his food spicy. It went together quickly and easily--wonderful recipe!!

Basic Fondue

Reviewed: Dec. 8, 2001
I halved this recipe and found that it needed a bit more milk to have a fondue like texture. I also substituted the garlic cloves for garlic and onion powder, and added two slices of swiss cheese and a splash of beer. I served it with pieces of french bread and we really enjoyed this meal.

Reese Cup Pie I

Reviewed: Dec. 5, 2001
Amazingly enough, my chocolate lover husband did not care too much for this pie, and I, a definite non chocolate eater, thought it was pretty good. It was quick and easy to make, and I may try it again with a few variations.

Quick Crescent Taco Pie

Reviewed: Dec. 1, 2001
I have been making a variation of this dish for years, omitting the crescent roll, just using tortillas to make a crust, and I thought this would be a nice change of pace. My husband didn't appreciate this recipe at all, he thought the dough made it too soggy, however, I thought it was pretty good. I used doritos and omitted the olives and served the sour cream on the side. Since hubby didn't enjoy it, I probably won't make it again, but overall, I don't think it was a bad meal.

Chicken Caesar Pasta

Reviewed: Nov. 23, 2001
Not a bad recipe. I omitted the lettuce, it just didn't appeal to me at all. The leftovers didn't reheat well. The dressing gave it a nice twist, I may try it again.

Boston Cream Pie II

Reviewed: Nov. 23, 2001
I wasn't very impressed with this pie. The cake didn't have much flavor to it and was difficult to cut in half--it was entirely too soft, and just fell apart. I couldn't get the lumps out of the pudding no matter how hard I tried, and once the pie was in the refrigerator, the glaze got so hard, you couldn't slice the pie without the top layer bouncing off. I made it for Thanksgiving and no one really liked it--not one person who tried it finished their piece. I won't make this again.

Apple Crumb Pie

Reviewed: Nov. 23, 2001
I made this for Thanksgiving and it was incredible! The entire family loved it and it was actually the only pie that was completely gone at the end of the day! The only thing I changed was to double the amount of crumb topping, I just didn't think it was enough, it didn't cover the entire top of the pie. We warmed each slice in the microwave for 35 seconds and topped with Cool Whip--excellent!! My other apple pie recipes will be deleted from my recipe box!!! Thanks for a wonderful recipe!!

Tastes wonderful, however, I needed to add a bit of milk to make them easier to spread. Quick, easy, and tasty!!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Nov. 19, 2001
These cookies were very good and stayed soft. The pudding gives them a unique flavor. I halved the recipe, since there are only two of us, but by the end of the night, we only had ten cookies left--will have to make the whole batch next time!! My husband is very picky about his cookies, but he loved these, and in fact, asked me to make a batch for him to take to the office!! Thanks for a great recipe!

Emily's Famous Sloppy Joes

Reviewed: Nov. 12, 2001
I omitted the onions and peppers because my husband doesn't care for them, and replaced the cumin with some extra chili powder. I also added a dash of cayenne and a splash of tabasco and topped each sandwich with sharp chedder which I melted under the broiler. Very good sandwiches that reheat very well--my husband took them to work for lunch for two days after we had them for dinner. We will definitely have these again.

Cheese Biscuits I

Reviewed: Oct. 14, 2001
These were very good and even impressed my husband, who is very picky about the bread he eats. I found that I only needed to bake them for about 8-9 minutes for them to be soft, which is how we like them. I also omitted the parmesan completely and doubled the amount of cheddar. They don't reheat well, so only bake as many as you will need for your meal. I don't think they tasted like Red Lobster's, but they were very good. I'll be serving them again!

Fried Chicken with Creamy Gravy

Reviewed: Sep. 1, 2001
This recipe was outstanding! The gravy was incredible, although I doubled the amount of flour called for. The kitchen is a disaster area, but it was well worth it! I served it with mashed potatoes, corn on the cob, and biscuits and my husband says it reminds him of the home cooked meals he used to get as a child growing up down south!! Hands down, the best fried chicken recipe I have ever made, as well as the best gravy ever served in this house!!!!!

Tuna Macaroni Salad

Reviewed: Jul. 17, 2001
This didn't really turn out as well as I had hoped it would. You really couldn't taste the ranch flavoring with the amount called for in the recipe, and you definitely did not need the milk. Also, fresh vegetables would have been much better. I won't make this again, at least not without several changes.

Carrot Cake III

Reviewed: Jul. 17, 2001
I made this for my family reunion and I didn't have any left overs!! I halved the amount of sugar in the icing and only put pecans in the cake (not the icing) and it was wonderful! One of the best carrot cakes I've ever had!!!

Cookies 'n Cream Cake

Reviewed: Jul. 4, 2001
I made this cake for several gatherings in recent months and had a huge hit on my hands--I can't serve it without people asking for the recipe! When I'm pinched for time, I substitute canned vanilla frosting, but your version is better!
