Peanut Butter Cups Brownies

These were excellent!! I made them for a picnic, but didn't get out the door with them because my husband attacked them when I wasn't looking! They are incredibly easy to make and bake up very moist--they'll be added to my permanent cookbook!

Berry Cornmeal Muffins

I had originally intended to make muffins, as the recipe calls for, however once everything was mixed, the batter was incredibly thick and unusable. I decided to add milk to make a cake like consistency, and baked it for almost an hour in a 9 by 9 glass pan. It turned out tender and moist, and has a nice flavor to it. I used mixed frozen berries, rather than just strawberries and it was pretty good!

Cheddar Ranch Dip

I made this for a party and I thought it was wonderful. I served cheddar pretzels for dipping and it was a great combination. I did cut back on the amount of bacon bits, as I thought the amount called for would be overpowering. I halved it and thought the dip was great. I'll make this again and again--it's so simple and easy.

Angela's Easy Breaded Chicken

I used ranch dressing rather than italian and used garlic and herb bread crumbs. The chicken tasted wonderful and was very moist and tender--no knife required!

Linguine with Scampi

Sara's Beef Jerky

My husband thought the flavor of the jerky was very good, but thought it was too crunchy. I'll try it again and reduce the cooking time to give it the chewier texture that he likes.

Spicy Salsa

I don't eat salsa, but this got a HUGE thumbs down from hubby. He didn't like this recipe at all. While I was cooking it, it looked more like soup than salsa, due to all the vinegar. I actually ended up straining it all out, but apparently, it didn't help. Hubby said the vinegar taste was overwhelming. I don't recommend this recipe and will delete it from my box.

Chocolate Pecan Pie

I made this for my husband because he loves pecan pie and he loves chocolate pie, so I thought he'd really love this. I don't like chocolate or pecans, so I can't comment, but based on his response, this will not be made in this house again. He said the chocolate was completely overpowering and I used less than was called for. I gave a few slices to my brother and he said it was only OK.

Beer Batter Fish Fillets

We enjoyed this meal, although I did leave out the dill, as I didn't have any, and I cut the amount of beer to slightly less than half a cup, because three quarters seemed to be too much and would have made the batter too thin. These turned out well, were crispy and flavorful, and I'd make them again.

Barbecued Country Ribs

I decided to try these in my slow cooker, as I don't own a pressure cooker and they were wonderful!! I didn't precook them, and just doubled the recipe, adding the spices to the water and ketchup, along with some minced garlic. I cooked them on low for 10 hours and they were so tender, the meat fell off the bone. They didn't taste like barbecue, but they had an incredible flavor. I'll definitely make these again!!!

Quiche Lorraine I

This recipe was OK, definitely not as good as I was expecting. My husband didn't really like it at all and only picked at it. When I looked in the oven when there where ten minutes remaining in the the bake time, I knew there was no way it would be done in time, so I returned the temperature to 425 and it was done in only five additional minutes, so perhaps you would keep it at the higher temperature for ten or so additional minutes in the beginning of baking. I also added extra cheese to it, and used cheddar as well as swiss. I gave the leftovers to my brother and he loved it, but since hubby and I weren't that fond of it, I probably won't make it again.

Karen's Taco Pasta

We enoyed this meal, it was a change of pace from the usual pasta fare. I used elbows and made a goulash, then layered cheese throughout and on top and baked it at 325 degrees for about fifteen minutes. Serve with a salad and some bread and you've got yourself a meal!

Easy Ham and Noodles

This was simple to make and went together very easily. It's what I call a comfort food. Definitely not something to serve to guests, but delicious for hubby and me!! I used 98% fat free cream of chicken soup and 2% sharp cheddar cheese, along with 2% milk and this tasted wonderful. My husband had no idea he was eating low fat, you can't tell the difference! I also used canadian bacon instead of ham and added some cayenne and garlic powder to spice it up a bit. I also found that mixing all the ingredients in a pan on top of the stove for a few minutes helps with the cheese melting, and reduces the time in the oven to about 15 minutes. I think the less time spent in the oven, the creamier the dish will be. Just a thought!! In all, an excellent meal we will have again!

Baked Potato Soup I

I thought this recipe was wonderful, but my husband didn't really care for it much, and he loves potato soup. My brother in law loved it so much, he took all the leftovers home and insisted on having the recipe! I did omit the sour cream and some of the flour, and added extra cheese, and it was very good, and very thick. I served it with grilled cheese and bacon sandwiches and had a great meal--well at least my brother in law and I did, but what does hubby know?????

Spicy Salsa

This was very labor intensive and with the price of tomatoes around here, it cost me around fifteen dollars to make this, and my husband wasn't that enthused about it. I don't eat salsa, so I can only go by what he says. He said it isn't very spicy at all, and I used all four jalepenos, although that's probably just a matter of individual taste. He also claims it is "missing something" although he has no idea what, so he can offer up no suggestions. I think I'll stick with the storebought salsa for now.

Kentucky Hot Brown

We loved this dish!! I used cheddar cheese rather than parmesan for the sauce, and I omitted the egg, and then topped each sandwich with shredded mozzarella before placing under the broiler and they were GREAT!! My husband absolutely LOVED them and he is incredibly picky about his food. This will be made again and again!!

Hot Wings

I thought these were pretty good. I only used tomato based hot sauce and I added minced garlic and they were not incredible, but good. They weren't spicy enough for my husband, so I added cayenne and tabasco to the sauce, which "kicked it up a notch"! I'll probably try them again.

Kisses Peanut Butter Pie

This pie was really good, however, it didn't belong in a pie crust. I should have taken other reviewer's advice and used a chocolate crust. The filling is delicious and the chocolate layer on the bottom is a great idea. I drizzled the top of the pie with chocolate syrup and sprinkled nuts over the syrup--marvelous! The only downside was that crust--we aren't eating it, just picking out the filling. I'll make it again with the chocolate crust.

Chicken and Shrimp Linguine

This was delicious!! I used only chicken and omitted the nutmeg--nutmeg with chicken didn't appeal to me at all. I also reduced the amount of wine to 1/3 of a cup and it was the perfect amount. Just one note, if you like to soak the sauce up with bread, as my husband does, the amounts called for in this recipe aren't enough. It just barely coats the pasta. I doubled the cream sauce and it made the perfect amount. This one will go in my permanent file!!
