I also separated the eggs, added the whites at the end. I used 1 t rasp extract and 2 t van, sifted then measured the flour, added 1 t baking soda(in addition to the baking powder), cut the butter down to 3/4 cup, then added 1/4 sour cream in place(also to balance out the ph from the addition of the baking soda), and cut the sugar down to 1 3/4 cup. I also used cherry sugar free jello instead of strawberry. The cake ended up airy and moist, not too dense. I baked it in a jelly roll pan lined with parchment paper and then made cream cheese frosting with some fresh strawberries, diced up in the frosting. I spread the frosting then rolled it up into a strawberry roll instead of a pumpkin roll. Turned out fabulous!
