About this Cook
I was a single mom for 16 years. I owned my own business for 9 years and enjoyed that opportunity! I now have remarried and my 1 child has suddenly turned into 5 (1+4). Cooking is fun, but challenging since I like to try to choose healthier recipes, but now need to accommodate a vegetarian as well. allrecipes is my only go to site to find delicious new things to create. I appreciate all the reviews from others!

Chicken and Biscuit Casserole
I doubled the recipe and thereby added a few more veggies, 1/2 a zucchini and red pepper diced and skipped peas altogether. For the liquid I did deviate a bit, I used the 4 C. of broth as written but added 1 C. of sour cream and 2 C. of milk. To me that seemed about right, I didn't want it too thin. I used E-Z Drop Biscuit Recipe from this sight, ONLY because I didn't have mix. It filled my 9x13 dish without running over. I dropped the biscuits by spoonful right on top. I baked it the 30 minutes required. Utterly Delicious!!

Classic Peanut Butter Cookies
These were delicious! Followed the recipe exactly and baked for 9 minutes as directed,on parchment paper. I was able to get 5 dozen from this recipe. They were perfect. I took them to work for a special lunch and of the 4 dozen I took, only 4 cookies came home. Thank you!

Turkey Taco Soup
Delicious! I did however have to adapt it for a family that includes a Vegetarian, and improvise based on what I had. I browned the ground Turkey separately. I sautéed the onion, garlic and 3 ea. of the celery and carrot in the Olive oil, and a chopped red bell pepper. I used 2 cans of chicken broth, 1 can of diced tomatoes, 1 med. can of tomato paste along with 2 cups of water. I didn't have taco seasoning, so I improvised by doubling the listed spices. I let it simmer until carrots were tender. Served the turkey on the side as a garnish along with Cilantro and green onion. I will definitely be making this again!
