Peanut Butter Fudge II

Super easy and yummy. My boys loved it. From the other reviews it sounds like some people have been misreading the recipe and using peanut butter instead of peanut butter chips. That might be why some have said it didn't set for them. I have made it twice, so far, and it has set up both times for me. The first time I made it with all dark chocolate chips and it was good. The second time I used pb chips and dark choc. chips. For more peanut butter flavor I threw in a large scoop of crunchy peanut butter (no it's not in the recipe) and about a tsp. of vanilla. My sons said it reminded them of no bake cookies, without the oatmeal. Yum!! Will make it again and again and will continue to try some other variations. Thanks!

Easy Enchilada Casserole

This dish has good flavor. I mainly tried it because it is similar to my own chicken enchiladas that my family loves. Thought it would be nice to try something a little different for a change. The salsa and sour cream are a good combination, and the salsa made it spicier. Instead of cream of chicken I used cream of mushroom soup (I prefer its flavor) and added a can of creamed corn. Will make again!

White Chocolate Raspberry Cheesecake

This is one of the best cheesecakes I've ever made and I've made many different cheesecakes. It is also wonderful with blueberry and I made it once with both blueberry and raspberry and it was terrific too. When blackberries are in season I will probably try it with them and strawberries would be great too. I was afraid the melted white chocolate would make it too sweet, but it doesn't. I found if you put the berry liquid in a cup with a spout (like a measuring cup) it is easier to pour and the marbling comes out prettier. You can then drizzle it in swirls around the top of the cake and then use a butter knife to marble it. Turns out very pretty. I will keep this recipe and make it and variations of it for years to come. Using the water bath method makes it come out extra creamy. My husband said it looked professional and said he could taste the difference in how it tasted when baked that way.

Slow Cooker Pork Cacciatore

This turned out really well. I took away a star because I felt 7-8 hours was way too long. Maybe that is why so many are saying their pork turned out dry. I used a fattier cut of pork in place of pork chops. I did brown them ahead of time and checked them after 2 1/2 hours and they are perfectly done even on the low setting of my slow cooker, but that will depend on how thick your cuts are. I didn't have any white wine, so substituted chicken broth in place of it. My sauce turned out thick enough, but I also used crushed tomatoes in place of diced. A family preference. Some grated mozarella and parmesan on top worked well and served along with whole wheat spaghetti. Thanks for the recipe!

Blueberry Cheesecake Bars

I just made these for the first time. Very easy and yummy recipe to make for a gathering. I think next time I may try them with extra blueberries (maybe slightly sweetened) and minus the jam since I thought they were almost a little too sweet. I only had frozen blueberries, but worked great. Also, think this recipe would be excellent for raspberries or strawberries.

Delicious Ham and Potato Soup

This is a wonderful chowder style recipe. I've made this several times now. My husband and oldest son really enjoyed it. I then made it for my parents and they thought it was so good my mom was asked what all I put in it so she'd be able to duplicate it. True praise indeed! The only thing I added was some corn because we love corn and I thought it would go well with the other flavors in this soup, and it does. I didn't feel this was an especially time consuming recipe as some have said and I more than doubled the recipe.

Blueberry Cream Muffins

This is a good recipe. I made it into loaves and added a streusel topping for extra flavor. I followed the recipe except substituting 1 cup whole wheat flour for part of the regular flour. The only reason I'm not giving this 5 stars is because the last time I made blueberry bread I made a blueberry zucchini bread (also found on this site) which turned out moister and with more flavor. This is a good recipe, but I will probably stick with the blueberry zucchini bread in the future. My husband had felt it sounded strange to have zucchini and blueberry together, but loved it.

Chocolate Scotcheroos

My boys loved these. They are very good, but extremely sweet. I almost didn't use the butterscotch chips because I personally don't care for it very much, but since my sons do I used them anyway. As expected they are very sweet. I was surprised the recipe called for adding sugar to corn syrup because it's a sweet syrup already. Next time I think I will probably be making the following changes: either completely cut out the sugar or cut it way back. I also think I would prefer the recipe without the butterscotch chips and will instead mix in some peanut butter (probable 1/2 to 1 cup) into the chocolate. My husband loves peanut butter and chocolate together.

Blueberry Zucchini Bread

This is a really wonderful moist bread. I followed the recipe except I used frozen blueberries (slightly thawed, rinsed, & drained.) I made it into 2 regular size loaf pans, since I don't own any mini loaf pans. My husband thought zucchini and blueberry together didn't sound very good together, but after tasting it said I should make a loaf for him to share with his co-workers. I did add a crumble mixture to the top also because my family loves breads that way. I used a mixture of oats, flour, cinnamon, chopped walnuts, and a little brown sugar and butter. My mother-in-law also really enjoyed this. Will make again!

I really like this recipe. It was easy to make and was ready very fast. I used a little less chicken and kidney beans instead of chili beans, but is still turned out really good and I think I will make it again.

Peanut Butter Bars I

Wow! These are so good! I also tried it with milk chocolate instead of semi-sweet because my husband wanted me to, but I think they'd be good either way. My sons love them. They do taste a lot like peanut butter cups. I will definitely make these for gatherings. I think I will buy some foil baking cups to pour them into before they set to make them look a little nicer and maybe a little swirl of chocolate on each. Thanks for the great recipe!

Slow Cooker Taco Soup

This is a very good recipe. The only thing different I did was to add some diced jalapenos and a little crushed red pepper to make it a little spicier. I think it would make a great base for enchiladas with some pepper jack and cheddar cheese thrown in and baked. I'm sure we'll be trying it that way too.

No Bake Chocolate Oat Bars

These are definitely worth making if you have a peanut butter lover around. I did use a little less butter and more peanut butter as other reviewers suggested. Even so I thought they tasted a little too buttery for me, but my husband and sons loved them. Will definitely make again, but might try even a little less butter.

Triple Berry Crisp

This is a wonderful recipe. I've made it a couple times now. Where we live we have a lot of fresh blackberries to use and then I had frozen blueberries to go with them. Didn't have any raspberries although I'm sure it would be wonderful with them as well. The blackberries & blueberries turned out great served with a some vanilla ice cream or whipped cream. It doesn't turn out mushy if you thaw the frozen berries and drain them well. I will definitely make this again.

Alfredo Mostaccioli

This is a fairly basic alfredo sauce with a few additions. Having made alfredo many times & reading other reviews I had a couple comments. Many people said this recipe is too salty. I don't recall ever adding salt to alfredo before. There is already salt in the butter, unless you are using unsalted butter, so I would definitely recommend not adding extra salt or cutting it way back. If you subtract that this recipe goes well with grilled chicken, or shrimp as others have said. I like to saute some mushrooms in a little butter, garlic, & pepper and then add grilled chicken and penne pasta with the alfredo sauce. I also don't add parsley, but that's personal taste.
