Slow Cooker Chicken Taco Soup

This is a great recipe! I usually don't review highly rated recipes because the ratings normally speak for themselves; however I felt the need to review this due to some of the remarks that I read. Many people stated that the beer took away from the recipe. In my opinion this is not at all the case! I actually don't care for beer at all and surprisingly could taste it in the soup, but I found it added a great bit of flavor to it. Maybe it's the type of beer you use...I used Heineken. I loved it! I also don't normally care for spicy things, but somehow with okay with the bit of kick that was added to this soup. I didn't alter the recipe at all, and I actually get the sour cream and cheddar cheese with cottage cheese. It probably sounds disgusting but believe me it was good. I will be making this again and again...

Patriotic Pasta

This was really good. I subbed cottage cheese for the sour cream (only because that's all I had) and it actually worked. The only reason I gave it 4 stars is because I omitted the cauliflower and there still didn't feel like enough dressing. I would probably double it next time. Otherwise...delish!

Tomato Chicken Parmesan

This is delicious! I was initially a little concerned because of the lack of seasoning on the chicken, but the seasoned bread crumbs were more than enough. The flavor was perfect. The other reviewers were dead on, you only need one egg and I waited until the last 5 minutes to add the cheese (I used mozarella). I skipped the pasta because I'm trying to lose weight and didn't feel like I missed a thing. I'll definitely make again, and again...and again.

Chef John's Buttermilk Biscuits

These are great! I absolutely LOVE most if not all types of bread and usually shy away from making it because I know I'll eat it...but I had leftover buttermilk from holiday cakes and didn't want to throw it away. Anyway, these were super easy to make and came out delicious. The taste was dead on. In looking at the pictures, mine didn't come out as pretty as some of the others but I think that's just a matter of figuring out how to work with the dough. Also, I only had bread flour so that could have made the difference too. I'll definitely make again.

Cuban Beef Stew

Wow, I don't know if it was just me and I did something wrong but this was just ok to me. It seemed a little bland. I took a few reviewers suggestion and didn't add the potatoes and even that didn't help. OH well. :-/

Chicken Cordon Bleu II

This recipe is so good and super easy! My local grocery store sells thinly sliced chicken breasts, as opposed to the thick ones that you usually see so that's what I got for this dish. I took one users advice and cut the breasts into 1" strips and I'm quite sure it worked out better, since it makes the dish a lot less bulky. Also, I'm always afraid of chicken (thinking that I will under cook it) but because this was so thin, there was no question about whether or not it was done. It's so picturesque too! It looks like a real chef's plate. This was just a trial run for me - I wanted to cook my mom something nice for Mother's Day and decided I would test this out. I didn't have any chicken bouillon so I used beef...usually not a good idea but the recipe didn't suffer at all. I didn't make any other changes and it turned out really well. I made it with an herb rice (my own recipe) and broccoli. It was great!

Carrot Cake I

This is a great Carrot Cake recipe! I've made carrot cakes for years and my family loves them so I'm pretty familiar with the process. Now, I will say that I changed the recipe just slightly, omitting the raisins (just for preference) as well as the corn syrup in the icing (I make cream cheese icing quite a bit and find that the corn syrup is unnecessary). It's super moist and smells sooo good when it's baking. I like to make layer cakes so I actually made 3 layers out of this batter, and baked it for about 25-30 minutes. Rave reviews!!

Grandma Ople's Apple Pie

OMG - this turned out sooo good! And it was easy too. I took one person's suggestion and added a tablespoon of cinnamon to the apples (not the sauce) and it turned out so nice and pretty. You'll love this pie! :)

Mom's Chicken Cacciatore

This was a really good recipe. The only reason I gave it 4 stars is because I pretty much took the advice of the other reviews to modify it. My only major change was the switch from white wine to red, which I think was a great choice. Oh and I used fresh diced tomatoes and no mushrooms. It was really flavorful. I served with yellow rice, broccoli, and sliced tomato. Yummy.

Alfredo Sauce

Looooved it! The only thing is, and I don't know if it's just me, it doesn't make for good leftovers. Warming it the next day just creates a pool of butter but the sauce was great when served immediately. Made it with blackened chicken and was a huge hit. I'll definitely make it again.

Butter Pecan Rounds

Excellent cookie! Not too sweet, and the pinch of salt makes it so much better. I only baked it for about 8 min, then put it on broil for 1 minute. Such a pretty golden brown. Yummy!

Basil Shrimp

Great recipe! Like most people, I halfed the mustard (and I used dijon instead of spicy brown) but it turned out really great. My mother loved it and commented on what great flavor it had. I also only marinated the shrimp for about 20 minutes and cooked them stovetop instead of grilling, it still turned out amazing. I served them with Herb & Butter rice, corn on the cob, and sliced tomatoes for a bit of color. Great, light yet filling meal.
