Chewy Crispy Coconut Cookies

Excellent gluten free option. Instead of wheat flour, use oat flour instead by blending oats in the blender.. Fantastic.

Sugar Cookie Icing

Reviewed: Dec. 25, 2010
This is my go-to holiday cut out icing now. Sometimes it can be tricky to get the right consistency - making a larger batch to begin with is easier than a small batch. Sets up beautifully and allows you to stack cookies for storage without damaging decoration. Good flavor too, though definitely an icing - this is not frosting.

Amazing Pecan Coffee Cake

Reviewed: Dec. 25, 2010
This was a huge hit and I'll definitely make it again. As suggested, made the bundt version and increased filling to 1.5X recipe and put in the middle. Upped cinnamon too, though not sure I will next time around. Dusted with powdered sugar. Beautiful.

Chocolate Chip Banana Muffins

Reviewed: Feb. 27, 2010
Excellent flavor. I too substituted one container of vanilla Yoplait for the plain yogurt and increased the bananas slightly. An excellent way to use up over-ripe bananas.

Mother's Applesauce Cake

Reviewed: Jan. 3, 2010
Excellent flavor - an instant hit. I only used 1/2 the icing and it was plenty. I also cut the clove in half.

Ultimate Maple Snickerdoodles

Reviewed: Oct. 11, 2009
Good flavor. I used butter and rolled cookies in a cinnamon, white sugar, brown sugar mix. Think I need to soften the butter more, as mine didn't spread much. Also, I based for 12-13 minutes - 10 left mine way too wet in the middle.

Big Soft Ginger Cookies

Reviewed: Oct. 3, 2009
Pretty good - but i modified the recipe so next time I think i'll try what's written. This time around, I used butter, 1/2 c brown sugar and 1/2 cup white, spiced rum for the water, and added a splash of vanilla. For rolling, I sprayed a scoop (a bit bigger han a meon baller) with Pam and dropped right into the sugar. It worked well and I didn't have to wait for the dough to chill. Will definitely try again,.

Apple Crisp IV

Reviewed: Sep. 28, 2009
Very good. I modified by using oat flour instead of wheat flour (just blend oats in the blender) so my daughter, who's allergic to wheat, could eat it too. I also prepped the apples by adding a 1/2 c of apple cider, 2 Tbls of lemon juice, 1/2 c brown sugar, vanilla, cinnamon and nutmeg to them prior to putting in the pan. I also added more cinnamon and nutmeg to the crust mixture, along with a pinch of cloves. Very very good.
