Awesome Italian Hoagie Spread

Reviewed: Mar. 19, 2012
I made this for a party based on all the good reviews and I'm not sure if my deli's quality of meat wasn't up to par or what but I didn't get the "fantastic-ness" of this recipe. Don't get me wrong, it wasn't bad by any means but for me, I'm not sure I'll make it again. I did use low fat mayo so maybe that is what did it? Also I didn't see any benefit of adding the tomatoes. If I make this again I do think what I'll do is spread in between some good italian bread, let it sit for a while to blend flavors and cut serving as finger sandwiches.

Tamale Pie Pronto

Reviewed: Jun. 22, 2010
I used diced chicken vs ground beef just because that is what I had thawed. I subbed in a can of Rotel for the regular can of chopped tomatoes since I love the flavor/spice but I did totally leave out the ketchup. I just didn’t think it belonged for my taste. Very good! I will make this again!! Thank you for a great recipe!

Buffalo Chicken Dip

Reviewed: Jun. 16, 2010
This is a great dip recipe and versatile to tweak to ones taste of what they like for 'Buffalo Chicken'. I usually bake vs using a slow cooker but have done both. I top with green onions for some color and additional flavor. The best was adding in crumbled gorgonzola and additionally topping the mixture with pre-cooked crumbled bacon. Yummo!

Chuck's Favorite Mac and Cheese

Reviewed: Dec. 23, 2009
I've made this 5 times now. Oven and crockpot methods. 2 times with light/low fat items, 2 times with regular fat items and once I tried Fontina cheese vs cheddar and added some prosciutto to the mix. Next time I'll do some fried up Pancetta. In all cases though it's been fabulous and I keep getting asked for the recipe! I love the response "Cottage Cheese? Really?". Simply - THANK YOU for such a wonderful, and might I say, very EASY, recipe!! This will be made again and again and I'd give it more stars if I could.

Stuffed and Wrapped Chicken Breast

Reviewed: Dec. 16, 2009
LOVED this dish!!! I found it by the Ingredients search because I was trying to use up some left over chicken, light cream cheese and bacon. This worked perfect! I did use fresh garlic (2 cloves) vs garlic powder and used the salt to taste. I probably ended up with 1/3-1/2 tsp and that was plenty and I'm a notorious salt freak. I also did as another reviewer and did NOT precook the bacon. I just cooked the dish at a little higher temp and when the bacon was to my liking (crispy) - the dish was done. For sure will make this again and again! Thanks for such a great recipe!!! On a side note if you have left over filling - it's great on crackers!

Sweet Onion Pie

Reviewed: Dec. 3, 2009
Excellent! It was a hit on Thanksgiving! I followed the recipe with the exception of using a mixture of white onion, red/purple onion & shallots and white cheddar cheese I will for sure be making this again. Thanks for the recipe!
