About this Cook
I've been married 25 years. I have 4 kids ages 23,17,15 and 10. I like cake decorating and have made 100's of birthday, wedding and anniversary cakes for friends and family. They say that I should open up my own bakery...maybe someday. I work full time in a dental office, so I don't have much time to bake cakes these days.
My favorite things to cook
I cook a lot of mexican dishes(sometimes my youngest complains that we eat it "too much"). I love baking goodies, especially around the holidays.

I have more than I care to mention. One incident in particular happened in the summer of 2006. I was putting together a "New York style cheesecake" wedding cake for my best friends daughter. Because it was so hot outside and in my kitchen, the cream cheese frosting used to add a decorative border broke down and separated. After trying to cool it off in the fridge and adding more white chocolate I was unsucsessful and I couldn't use what I had. I had to run to the store and get fresh ingredients and make a new batch. Fortunately it did turn out beautiful in the long run, and everyone loved it. However I missed the wedding ceremony which upset me very much. But we had a great time at the reception!

Buttermilk Pancakes II
I was hoping that this recipe would work out for me. It sounded promising. I've been wanting a good homemade pancake recipe. I followed others advice and had the milk and eggs at room tempurature, and I added vanilla for flavor. I followed the directions on the recipe and did not mix dry and liquid until ready to cook. At first it was real fluffy and the first 8 came out great. But then the batter went flat. I don't think I over mixed (I was real careful about this). The following pancakes looked like crepes. Maybe it was because I used margerine instead of butter. And I used 1% milk mixed with lemon juice to substitute for buttermilk. I want to try this again with butter and buttermilk and see how that works. Otherwise, Bisquick is still better.

Crumb Cake I
This was ok. The batter was really runny and the crumb topping just sunk into the cake. It did have good flavor, but I like more of a crumb topping.

Chicken Flautas
This was easier to make than taquitos, although very similar when cooked. I will probably try this again with flour tortillas. Very flavorful, but I agree with some of the other reviews, a bit dry. My hubby liked them. Also, my daughter is a vegetarian, and I made her some with veggie "chicken strips". She loved it!
