Macaroni Tuna Casserole

Reviewed: May 31, 2012
Great recipe to embellish as desired. I used cream of mushroom soup instead of celery, and I topped with some breadcrumbs along with the cheddar. Absolutely delicious!

Roxie's Bran Muffins

Reviewed: Jan. 6, 2012
Fantastic recipe. I was worried because the batter was quite sweet, but once cooked these muffins had a very mildly sweet, hearty taste. I ended up making 6 giant muffins instead of 12 regular size because it's the only pan I had, and just half muffin filled me up! This is definitely going to be come a regular breakfast/snack item in my house.

Vegetarian Chickpea Sandwich Filling

Reviewed: Dec. 28, 2011
I really thought I would like this recipe, but the mixture of garbanzo, dill and mayo just seemed to weird to me. The flavors didn't mesh well and then texture was very bizarre.

Creamy Cheesecake

Reviewed: Aug. 10, 2011
A great, easy cheesecake. I use a store bought graham cracker crust to save time, and omitted the lemon zest. Definitely make sure to soften the cream cheese well before mixing, otherwise you'll end up with lumps. Also, I had to bake mine for much longer than the listed 25 minutes. In all it took about 45 minutes in the oven and even then it still looked jiggly. It ended up setting fine so I'm not sure what happened. Either way, this is a great recipe!

Chicken Pot Pie IV

Reviewed: Sep. 10, 2010
Very delicious and easy to make! I added in one small yellow potato, and one stalk of celery. I also followed some suggestions in the comments to use two cans of buttery crescent rolls for the crusts, which worked extremely well. They are light, flaky and buttery. I would suggest using more soup to make more gravy, but that's my personal taste. I put in less salt - just a few shakes. I put in pepper and basil for more flavor. I'm sitting here eating it right now, and I'll definitely be making it again, especially now that it's getting colder!

Pesto Cheesy Chicken Rolls

Reviewed: Jul. 23, 2009
Wonderful recipe - easy to make, and it came out great. I put some extra pesto on the top of the chicken before baking it and it turned out great. The cheese inside leaked out a bit but I was able to just put it right back onto the top and it was just as good. A definite hit with my family!

Yellow Pound Cake

Reviewed: Jul. 17, 2009
When I did this recipe I used one less egg, and a tad more sugar. It came out wonderfully! It was my first time baking a cake, and even though I stumble over a few steps it turned out delicious. I decided to make some real whipped cream to go on top and my family loves it. I'll definitely be making this again and again!
