Aunt Norma's Rhubarb Muffins

Made these this morning because I couldn't find my Grandma's recipe. This one sounded about right. The only change I made was subbing applesauce for the oil. Delicious! ;)

Slow Cooker Pulled Pork

WOW! I used a 6 lb. pork butt roast, sprayed the crock pot with PAM, and covered with store-brand root beer. Followed the rest of the directions as written and it was AMAZING! My picky 7-year-old says it's "out of this world!" :)

German Pancake

AMAZING!!! We'll definitely be making this again and the syrup alone for our Christmas Eve Waffles (family tradition). Followed the recipe (only substituted skim milk with 1 t. lemon juice for buttermilk, as I never have it on-hand) and would recommend spraying the pan before putting the melted butter in. Try it -- it's sure to be a hit! ;)

Margarita Grilled Chicken

Made as directed and it was not a hit with our family. I think it would be better if it was used as a filler for fajitas. It just seemed like it was missing something.

Wow! I was not expecting this to be sooooo fabulous. I cut the sugar to 1 c., used light sour cream and made homemade cream cheese frosting with fat-free cream cheese. It was an absolute hit! Will make again and again...

Garlic Herb Grilled Pork Tenderloin

Absolutely the standard for tenderloin at my house. I used dried rosemary and thyme as that is what I had in the house and we were floored by how flavorful and tender this meat was...could cut it with a fork, melt in your mouth. I will say that I was very careful not to exceed the internal temp of 160, and let it sit to soak up it's juices for about 10 min prior to cutting.

Mini Cheesecakes

I made this recipe lite, lower fat by using neufachtel (1/3 less fat) cream cheese and fresh mixed berries with a squirt of fat-free whipped cream on top for presentation. The result was amazing. I will make it again and again. 176 calories for each serving with 10 grams of fat (still not low fat but lower than the original 15 grams).
