Hammy Hash

You have to work to get a good crisp out of the potatoes, but it's worth it. Added a clove of garlic & some paprika, a strip of bacon left over from breakfast & used the bacon grease. Sour cream & franks. Done.

Lime Chicken Soft Tacos

I made this following the recipe. The oregano was a little odd but I didn't mind it. I'll leave it out next time. I deep fried my own hard shells and added fresh cilantro. A three because it's a good base recipe that I'll continue to use.

Garden Fresh Tomato Soup

This was great! I did triple the recipe and skinned the tomatoes beforehand. I sauted the onion and a few cloves of garlic first. I also added basil and chives (chives because I didn't have enough onions) from the garden. Added a few dashes of cayenne pepper as suggested. Cut down the sugar to about 1.5 T, even with the recipe trippled. The color of my soup was more orange than red as I had many different varities of tomatoes and specked with green. It was a delicious! Especially with a little parmesan cheese sprinkled on top. This was my first time making my own tomato soup and this recipe was a great base! Thanks!

Spicy Mexican Torte

Easy and delicious! I used 8 inch tortillas without any problems. 2 tortillas on the bottom, 1 between the meat and beans, then 2 between beans and red peppers (both under peppers & over), 1 between beans and topping of meat & cheese. Mine just fit into the pie pan! Not hard to cut. I used spicy chipotle refried beans.

Easy Hawaiian Chicken Packets

Yum! Very easy. I cut the recipe in half, added two cloves of pressed garlic a few good squirts of Saracha sauce and some pepper. I also substituted the peppers for two carrots and cut the chicken into cubes. Threw it in the oven for 30 minutes at 350 degrees, kept it covered for 20 of those minutes and served over rice.

Jenn's Out Of This World Spaghetti and Meatballs

I followed others suggestions and used 1 can of paste and 1 15 oz of sauce instead of 3 cans of paste. I also only added 2 Tbs of sugar and used 2 cups of water. This is the first spaghetti sauce I've made and it was AWESOME. :) Sooo much better than pre-made.

Aimee's Quick Chicken

Added some bread crumbs. It was pretty salty. But it was easy and the flavor was good overall. I would recommend lining your baking pan with foil. After soaking for 2 days and 2 cycles in the dishwasher I threw out the pan.

Basil Chicken over Angel Hair

This was great. I added black olives which complemented the other ingredients very nicely. Kick it up a notch with red pepper flakes to taste. I did use fresh tomatoes and but only had dried basil.

Lasagna with Creamy Pink Sauce

This turned out great! I added 1 -10 o pkg of chopped frozen spinach (thawed) to the cheese mixture and also only used 3 noodles per layer. Definitely a keeper!

Crispy Herb Baked Chicken

I'm so glad I found this recipe! Who knew? Instant potatoes makes a delicious coating! I added about 1/4 cup italian seasoned bread crumbs, used roast garlic potato flakes, so skipped the garlic, pepper, basil, and some red pepper flakes. Cooked the chicken in lightly greased foil, with 10 minutes left I flipped the chicken and took off the foil. Crunchy goodness... Yum!

Seven Layer Casserole

So I rated it a 4 because this recipe is very close to my mother's Seven Layer Casserole. The best way (in my opinion) to make this - use 1 lb hamburger (brown first), a can of diced tomatoes and about 1 Tbs of water. No peas, No tomato soup, No cans of water. Layer the same order as noted in the recipe, although on top of my hamburger I add more potatoes and carrots, then salt and pepper to taste. Drizzle the water in over the top of it all. It's not a blow-your-socks-off meal, but it's easy, it's hearty, you probably have all the ingredients. Plus it hits the spot at the end of a cold winter day.

Basil, Roasted Peppers and Monterey Jack Cornbread

It was great! Very hearty. I couldn't find the roasted, marinated red peppers at my grocery store so I just chopped up about a quarter of a red pepper and threw that in. Also I skipped making the cornbread batter and used two boxes of jiffy cornbread mix. Best when warm, right out of the oven.

Hamburger Pie

Meh...not that amazing. A great base though. I used one can tomato and one can mushrrom soup as suggested. It would have been quite bland if I only had used tomato soup. I also layered it. The potatoes definately need some butter/milk/egg. I am determined to make it better next time and plan on adding a bunch more spices, using more pepper jack cheese and mixing in more veggies.
