Jamie's Minestrone
This is a great recipe! A few suggestions though - I used fresh cooked beans, not canned; I used frozen green beans, not canned; I left out the zucchini (don't like it, thought it'd be mushy anyway); and I added chickpeas (a must for minestrone!). These changes made for a great soup! In general, this is a great starter recipe, but the proportions of the veggies can be adjusted to your preferences. I also used minced garlic and dried herbs instead of the fresh --- still turned out great!

Banana Oat Muffins
Great foundation recipe! I substitute unsweetened applesauce for the oil and use 1 cup whole wheat flour & 1/2 cup all-purpose flour. I also add 1 cup walnuts & add 1/4 cup flaxseeds for some crunch --- delish!

Broccoli Casserole III
I've used this site for a long time and have always trusted the ratings of these fellow cooks. This recipe was a total disappointment though. I cooked the broccoli ahead of time as many reviews recommended, and otherwise followed the recipe exactly. Not good at all! And I love broccoli. Very bland. very mushy (though the crackers help) and the processed cheese got too dry and odd tasting after baking that long. Sorry, but no one in my family thought this was good.
