As a vegetarian, I was on the lookout for a pot pie, and this is it. It's easy to make, even on a weeknight (so long as you have the pie crust thawed beforehand!). I've also used the filling with homemade crust with excellent results. I usually cut the thyme in half and add 1 teaspoon of minced garlic which goes great with the ingredients in the filling. I have also added small chunks of cheddar cheese for a dairy and protein serving. Thank you for this recipe!
