Cheesy Amish Breakfast Casserole

This has been our go-to breakfast casserole since we found it. It has also become our Christmas morning breakfast too. We use sausage instead of bacon...not sure why. I think we must have had sausage on hand the first time we made it and just stuck with that 'cuz it's SO GOOD! :)

Fabulous!! I did add some red pepper flakes for some kick. Used a bag of frozen mixed seafood (mussels/shrimp/calamari/scallops) from Costco and made this recipe really affordable (I think the bag was $15). Will definitelly make this again.

Blueberry Muffins I

These muffins were ok. I used 1 c. frozen huckleberries and sprinkled a few chocolate chips on as well. They tasted great! However, they stuck to the liners and totally fell apart when eating. Next time I would just use a greased muffin tin.

Poached Eggs Caprese

This was amazing!!! It took my husband and I about 30 seconds to clean our plates! I'm a big fan of eggs benedict, but it's very time consuming. This was so quick and delish!

Cilantro Tomato Corn Salad

Oh yum! I just happened to have a bunch of fresh cilantro and a couple of tomatoes that were needing to be used when I stumbled upon this recipe. I saute the onion & garlic in 2 T. olive oil as I want to eat this chilled (if it lasts that long) and reading other reviews, it sounds like the butter doesn't quite work well on the chilled salad. The I added 3 cups thawed corn, a can of black beans (rinsed), and since I was out of lemon pepper seasoning, I just added lemon juice and pepper. Took everything off the heat and added the cilantro, tomatoes, a diced green onion, and some salt. Then since it seemed to still be missing some flavor, I added a little (a couple taps maybe?) bit of lime juice. Very good. Light and guilt free!

Country Brunch Skillet

Ok, so I totally just used this recipe as a base for the one I actually made. We didn't have cubed hash browns, so I used regular ones, we didn't have bacon, so I used breakfast sausage. I also added a can of cream of mushroom soup. And....WOW!! It was so good!
