Watermelon Cookie

My mom used to make these when I was growing up! I LOVE how cute they are and am having so much fun baking them for my own son right now! I did substitute a 1/2 cup of whole wheat flour and a 1/3 cup splenda. Not that it will make much difference but any little bit helps!

Shortbread Cookies IV

The cookies have great taste but mine were very fragile. I cut them along the score lines after baking while they were still warm as the recipe suggested and most of them broke :( Next time I'd wait til they were mostly cool and see if that's any more successful.

Sundried Tomato Tapenade

Did things a little differently. Mixed all the ingredients together minus the feta. Before serviing on crositini, I spread each slice with goat cheese, then topped with the tomato mixture. I got lazy and didn't chop the tomatoes finely enough - will make sure to do that next time - delicious!

Baked Parmesan-Crusted Chicken

This is a great go-to recipe. To make it quicker I melted the butter in the microwave and added a sprinkle of garlic powder. I also used almost a T of each spice but dried as well as Italian breadcrumbs. I cut my chicken into nugget sized pieces and it only took about 30 minutes to cook! Came out great!

PHILADELPHIA® New York Cheesecake II

This recipe is the closest I've come to making a cheesecake that reminds me of the ones I had growing up on the East coast. Mine came out rich and dense just like I like it! It did brown on top before the recommended bake time so watch it closely as your near the end. I had NO cracking and didn't do anything to prevent it! I used plain grahams to make my crust :)

Won Ton Wrapper Appetizers

I used this recipe for the idea of the won ton cups only. I filled them with a tex-mex chicken mixture. But what a great idea! They baked perfectly!

Macaroni and Cheese with Bacon

This is almost exactly how we make macaroni and cheese except instead of putting tomato juice IN the cheese sauce, we add a little milk and then after it's done baking spoon tomato soup on top! I have NO idea how why we started doing this but I won't make mac and cheese unless there is a can of tomato soup also! And people can say what they want about "processed cheeses" but I prefer it to the oily grainy texture of Cheddar cheese anyday!

Roasted-Vegetable Stock

I made using the exact vegetables listed this time. Easy to make - great results. I think I simmered mine a bit long - only ended up with 4 Cups. This was my first time making vegetable stock and I will continue to make my own now I know how easy it is! I did add almost a full tsp of salt and just a dash of pepper.

Microwave Baked Apples

Reduced the nutmeg to 1/2 t so the cinnamon would come through a bit more. Only had to microwave for 2 minutes. Used a granny smith apple and left the skin on. This is a good quick snack!

Steak House Au Gratin Potatoes

I thought these were excellent. Theya re very mild but this is how I remember Au Gratin potatoes being when I was younger. I didn't have heavy cream so I used a substitute recipe. I put down a layer of potatoes then sprinkled with some cheese before topping withthe second layer of potatoes and cream. This way there was more cheese throughout - yum!

Ten Minute Chipotle Spiced Beef and Bean Chili

I suppose a lot of people choose this recipe for the quickness of it but chili is always better and tastier when it cooks long and slow, so I put my in the slow cooker all day. I also made a few changes based upon what I had on hand/other reviewer suggestions. Used 1.5lbs beef, substituted onion powder, reduced salt/cumin to 1 teaspoon each and upped the chili powder to 2 TABLESPOONS and the tomatoes to 2 cans. Omitted the hot sauce and removed the seeds from the chipotles so it that it had the smokey flavor without all the heat. With my changes I would make this again and again :)

Apricot-Filled Empanaditas

I used this recipe more as a guideline. I had fresh apricots I wanted to use up. I scaled the recipe way down to about 1 cup apricots and didn't use as much sugar as the recipe called for. I also used puff pastry and baked these. I loved them, the bf thought they were too tart.

Warm Spinach Dip

I ended up using 2 bunches of chopped fresh spinach, doubling the cheddar cheese and omitting the spicy mustard. My bf said it had to much cream cheese. Next time I'd probably halve the cream cheese and still double the cheddar but I will definitely make again! Thanks for the recipe!

Tenderloin with Spicy Gorgonzola-Pine Nut-Herb Butter

This was delicious! I had to use Smart Balance "spread" because I was out of unsalted butter. I left out the parsely/garlic b/c I didn't have any and did not add salt/pepper. I thought it was a little "herby" at first but the more I ate, the move I LOVED it! Will definitely be making again!

Deb's General Tso's Chicken

Made exactly as written except used dried ginger in the sauce. This has great taste, I only wish my sauce turned out thicker and maybe a little spicier too. Definitely going to make this again with maybe some slight changes.

Hawaiian Baked Chicken

This was okay. The sauce was too sweet, and the dish just tasted as if it was missing something. Doubt I will make it again. Only change I made was using pineapple chunks.
