Real Hummus

I added an extra T of tahini to make it more creamy. And some extra garlic too. I found this recipe to be more lemony than others I have tried but I thought it was delish!

Creamy Vegan Corn Chowder

Made quite a few modifications after reading the soup doesn't thicken so well and that there might not be enough corn. First, I used 2 cans of corn and 1 can of creamed corn. I only used 2 cups of water and 1 cup of unsweetened almond milk. I needed 2 T of flour in order to thicken in. Omitted the pepper and garlic powder (used a tad more real garlic instead). Was ok, but I'll look for a different recipe to try next time - definitely think potatoes would make a great addition!

Cheddar Mashed Potatoes

I make this all the time (minus the bacon). It's soooo good! I ended up making these tonight because I forgot I was out of milk but did have sour cream and cheddar in the fridge! Saved me a trip to the grocery store and a cold dinner!!

Baked Parmesan-Crusted Chicken

This is a great go-to recipe. To make it quicker I melted the butter in the microwave and added a sprinkle of garlic powder. I also used almost a T of each spice but dried as well as Italian breadcrumbs. I cut my chicken into nugget sized pieces and it only took about 30 minutes to cook! Came out great!

Apricot Cobbler

I loved this. I scaled it down and used fresh apricots sliced thinly - everything else I left as the recipe called for. I didn't think the topping was bad at all..the apricots have so much tang that the topping being mild meshed well. Will definitely make again!

Apricot-Filled Empanaditas

I used this recipe more as a guideline. I had fresh apricots I wanted to use up. I scaled the recipe way down to about 1 cup apricots and didn't use as much sugar as the recipe called for. I also used puff pastry and baked these. I loved them, the bf thought they were too tart.

Marinated Pork Loin

Made as written except used reg chicken broth and omitted the salt. Was not salty AT ALL. Excellent marinade. Next time I think I'd try it on a different cut of pork though.

Baked Scallops

Did not like. Could be that I no longer like scallops? I tried the breading alone and it was so-so, a tad too garlicky for me. So many people reviewed this saying even if they don't like seafood they liked this so I had high hopes :(

Warm Spinach Dip

I ended up using 2 bunches of chopped fresh spinach, doubling the cheddar cheese and omitting the spicy mustard. My bf said it had to much cream cheese. Next time I'd probably halve the cream cheese and still double the cheddar but I will definitely make again! Thanks for the recipe!

Juicy Peach Crisp

Mmmmm delicious! I made changes to try to healthify it some but I don't think it changed the overall taste of this one bit! I used 1/2 C soy flour, added in some oats, used Splenda, 3T brown sugar and 5T butter. I will definitely be making this again and again!

Kielbasa Kale Stew

I halved the recipe as I only had 1 bunch of kale left. Omitted the butter and used half chicken broth so I ommited the salt as well. Browned the sausage first. Came out great! I think it really need the chicken broth though.

I thought for sure I had burned this b/c after 10 minutes it wasn't done so I put it back in with the intention of pulling it out in a minute or two but got busy and forgot about it. It came out almost perfectly done so I'm not so sure the cooking time on this is accurate. It tasted great - I wa suprised b/c kale didn't seem too appealing to me but I had gotten some in a bountiful basket and didn't want it to go to waste.

Smooth and Creamy Peanut Butter Pie

Absolutely decadent! I used 1 C peanut butter and 1 C powdered sugar and realized I had only bought an 8oz container of coolwhip (sugar free!) but it worked out awesome! Mde my own crust with chocolate teddy grahams and crumbled Reese Peanut Butter Eggs on top! LOVED IT! I am planning to slice the rest and freeze as singles!

Chicken Enchiladas

Apple Bavarian Torte

I made as written, using 5 small granny smith apples sliced thin. I thought the end result was fabulous. I only wish the directions were a little clearer. I woudl recommend softening the butter and cream cheese before trying to mix them. Also, according to another recipe almost identical to this one it says to refrigerate for a few hours prior to serving. I did not know that and didn't plan better....ate ours warm tonight but still enjoyed it. Can't wait to try it cool and more set tomorrow! This was my first time making and eating any torte of this kind!

This was just ok. Made as written but cut in half for just one chicken breast - had barely enough seasoning. Was only slightly spicy. Just not something I'll make again, most likely.
