Creamy Carrot With Curry Soup

Very good soup! I might cut back on the curry for a crowd that can't tolerate too much heat, since it was a bit spicy. But still very good!

Mexican Chicken Corn Chowder

I made some changes based on the ingredients I had on hand, but this is a great recipe base/idea! Terrific dinner on the coldest day of the year. I garnished with cheese and scallions. Yum!

Spinach Quiche

I had two pie crusts leftover from Thanksgiving, so I was looking for a tasty and inexpensive way to use them. This recipe was perfect. I made it last weekend with 2% sharp cheddar, parmesan, frozen spinach and no onion (because I was all out). My bf loved it- we couldn't stop eating it. Today I made it again with 2% sharp cheddar, frozen spinach, onion, and black forest ham. It's in the oven- can't wait to taste it! This is a perfect recipe for a brunch. It stays very tasty even at room temperature, and is very forgiving, as the contributer promised!

Horseradish Pork Chops

Very good recipe. I sprinkled some paprika and parsley on top and turned the heat up at the end to brown the topping. Very juicy and bf loved them.

Chicken Tortellini Soup With Zucchini and Tomatoes

This soup was excellent. Honestly, I modified it, but only because I had to use what I had on hand. I used 5 sliced carrots instead of zucchini, 1 onion, 3 celery ribs, and 1 can of petite diced tomatoes. I used 4 cans of low sodium chicken broth and chicken tenders that I baked first with olive oil and oregano. Threw it all in the pot and added a dash of hot pepper sauce, dried parsley, and spinach/cheese tortellinis. Divine. I caught my bf eating it straight out of the pot after he already had seconds. :-)

Creamed Spinach Casserole

Excellent recipe- exactly what I was looking for. I actually had to wing it on the measurements because my computer froze mid-recipe and I hadn't printed it. Whatever I threw together sure tasted delicious, homemade and perfectly old-fashioned. I think I'll add it to my holiday menu. Great vegetarian filler dish for non-meat eaters and packed with iron! Thanks Jane!

Creamy Pimento Cheese

Yum! I added a dash of cayenne for some zip, and green onions, as another reviewer suggested. I also used roasted red peppers, good extra sharp and light cream cheese, which beats easier. I bought little garlic breads to spread it on, but its so good I think I'd prefer it on crackers, as not to take away from the taste of the dip.

Easy Alfredo Sauce I

This was excellent- my bf actually licked his plate when he thought I wasnt looking, lol! He said it was better than his Italian mother's. I used light butter, light cream, and generic parm/romano mix from the shaker and it was still creamy, smooth and full of flavor!

Flavorful Flounder

This came out excellent! I wish I took a picture...I used low fat butter and 1tbs full fat mayo/2 tbsp low fat mayo, high quality grated parm and the scallions. I sprinkled some lemon juice and dill on the flounder, baked for 15 minutes, then spread on the mixture, sprinkled with paprika and panko- broiled for the last five minutes for a beautiful crispy creamy finish!

Honey Baked Chicken II

Pretty good...I don't think I used quite enough honey.I had to adjust the measurements a bit because I had a little less than a 1/4 cup of mustard left. I think I might try again with boneless chicken.

Crustless Bacon and Cheese Quiche

This came out really good. I made it vegetarian because I had no bacon. I used homegrown cherry tomatoes, black olives, scallion and green pepper. I sprinkled paprika and added some garlic powder, salt, pepper and red pepper flakes. I used egg beaters, however, and they puffed up huge and almost overflowed from the baking dish which was a little scary, lol! But they were still light and fluffy. Yum! This also took longer than a half hour to set.

Buffalo Chicken Dip

Awesome dip! I tried this once at my aunt's house and looked for a similar recipe. I made it today for football game day and yum! My bf said it was possibly the best dip he ever had. I used bleu cheese dressing and leftover boneless chicken. Great way to use leftover chicken, too!

Mary's Roasted Red Pepper Dip

Yum! This dip turned out really well. I made it almost exactly as written, except that I reduced the mayo and substituted half of the mustard with prepared horseradish. I agree with one of the other reviewers that tortilla chips are too salty and take away from the flavor. Nice crackers, little toasts or served in a bread bowl would be excellent!

Crab Stuffed Mushrooms III

Very good...I didnt soak the mushrooms. Rinse and pat dry then put just the caps (unstuffed) in the casserole dish with a few pats of margarine. Put the dish in the preheated oven just til the butter melts and then toss the caps in it. This keeps them moist and flavorful. I had no celery, so I used scallion and added some minced jarred roasted red pepper (pimiento). Yum!!!
