Strawberry Cheesecake Bites

Best idea ever!! YUM!! My strawberries were small so I have a lot of filling left, but I think I'm gonna use it for dip or just cover in chocolate :)

Meatball Nirvana

First attempt at making homemade meatballs. My breadcrumbs were expired, so I substituted rolled oats. I also accidentally added a lot more hot sauce than I meant to, but it didn't hurt them at all. They turned out spicy and delicious. The spices kind of reminded me of Italian sausage in a way. Delicious!

Incredible Potato Casserole

This was really good. I used pepper and onion frozen hashbrowns and light sour cream. I felt really guilty eating it though because of the entire container of sour cream and the cream soup and the butter, but it was delicious nonetheless. The only thing I would do differently next time would be to use a bigger bag of hashbrowns. I used about 1.5 lbs of hashbrowns and I thought it could have used more as the sauce seemed to be the star instead of the potatoes. Really did taste great though. Thanks for the recipe!

Lower Fat Banana Bread I

Very tasty! I did add cinnamon and did half white, half brown sugar. Everything else was the same. It took about 50 minutes for it to bake. Will definitely make this again :)

Slow Cooker Pulled Pork

I prepared the recipe as written. I was pretty tasty, but next time I think I will season the meat with some salt and pepper and garlic powder as others suggested. I used sweet baby rays sweet vadalia onion BBQ. I would suggest a more savory sauce for the pork because the sweetness of the sauce was just a little too sweet for this recipe. Overall I liked the texture and I think with a little more seasoning and the right BBQ, this recipe would be a winner. But pretty good as written :)

Best Brownies

These are so yummy!! I listened to some of the reviewers, which helped these turn out so great. I beat the eggs slightly with a fork before mixing them into the batter. I also hand mixed everything instead of using a mixer. Lastly, I baked for exactly 25 minutes and let cool for about an hour. I did as other reviewers smartly suggested as cut my brownies with a plastic knife, which helped them cut more smoothly. Just these little specific things made this recipe fabulous!! I should mention that I didn't frost these though. Many reviewers did not like the frosting and I didn't want to waste my brownies :) These turn out soft and fudgy and delicious. I think they'll be even better tomorrow once they've firmed up a bit. Thank you so much for the recipe as well as all the reviews!!

Chocolate Banana Oatmeal Porridge

Like with most things, I made my own modifications to suit my tastes, but this is great as a base. Let me start out by saying that I hate oatmeal because of the texture and bland taste. I've had this oatmeal for the past three days! I kept the oat/water/banana part the same. I tasted it from there and decided that peanut butter would taste good in there, so I put in 1/2 c creamy peanut butter. After that addition, I tasted it and practically screamed "Yum!". Lol the bf thought I was crazy, but agreed that it was awesome after tasting it. He wanted to see how it would be with the chocolate, so I added that in too. It wasn't as good, but still yummy. The next morning (I couldn't eat 1/2 of a recipe because of how filling it was), I heated up part of my leftovers and added 1/8 c sliced almonds and half a banana. Sooooo good!!!! Im also calorie counting, so if you're curious, 1/8 of this recipe with my modifications and toppings is 271 calories or 161 for just the oatmeal with my modifications. Very satisfying Bfast! Made me rethink how I felt about oatmeal :)

Crustless Spinach Quiche

It was okay. Kind of bland from the lack of seasoning. But it has potential. I would attempt this again, but I would add some different veggies and some more seasonings, like garlic powder and cayenne pepper maybe. Good base recipe though.

Spinach Brownies

I halved everything since it was only for two people. I also used frozen spinach, but everything else was the same. We enjoyed the combo of the spinach and mozzarella, but it needed some seasoning. My bf added hot sauce on top and said it was good that way. Will try again and play with the seasonings a bit. Great place to start! Also, be sure to drain the water from the spinach. I did this anyway, but from the reviews it looks like others did not.

Mama's Best Broiled Tomato Sandwich

Used Italian bread, half the tomatoes, and slices of mozzarella cheese plus the mayo to create amazing open-faced sandwiches that made a great small lunch for 3 people. I did not have the parsley or olive oil, but kept everything else basically the same. Turned out great!!

Best of Everything Veggie Burgers

I actually cooked these in a nonstick pan and used used about an eighth cup more breadcrumbs and they were fine. The smaller ones were easier to flip and were more firm than the bigger patties, so I'd recommend keeping them smaller if you cook these like this. The taste was pretty good, but I agree with another reviewer that it would be better as a taco filling. The texture just wasn't quite right to be a burger to me. But I will definitely try this as a taco filling or a topping for nachos. Mmm...

No Bake Peanut Butter Pie

Yummy!!! The only thing I did differently was put it into a chocolate pie crust just because I love that peanut butter/chocolate combination. I should mention though that I used 1/3 reduced fat cream cheese, light whipped topping, and skim milk to reduce calories and it was fabulous this way!! I also only made one pie since there was only me and my boyfriend eating it. I would recommend waiting longer than the time listed though. I made the pie two days ago and it's so much better today because it's more firm. Soooooooo good!!!! Thanks for the recipe!!

Real Italian Calzones

Made this twice in two weeks. First of all, each time i made these, I divided the dough into four smaller calzones. Very easy and you can use so many fillings! I did one with just pepperoni (served with spaghetti sauce for dipping) and one with buffalo chicken(added 1/2 c chicken and 1/2 c hot sauce) and one with meatballs(used 1/2 c quartered meatballs and 1/2 c spaghetti sauce with some additional for dipping)!!! I did add sauce obviously to the buffalo chicken and meatball calzones, but they were good and I would do it again. I also used mozzarella cheese for all three. So good!! Can't wait to make these again.

Slow Cooker Mashed Potatoes

I added some garlic powder and onion powder, but other than that I followed the recipe. I really enjoyed it, but the bf still wasn't wowed. He's pretty picky though. Make sure to stir the potatoes every once and awhile and I put a cloth under the lid, which worked well. I think I'll keep playing with the ingredients, but keep this as a base recipe since I liked it. Thanks for the recipe :)

World's Best Lasagna

As a first attempt at lasagna, I thought this came out really well. I lost the fennel seeds sometime between coming home from the store and baking, so I ended up leaving those out. I also didn't add sugar and not much salt. For the sauce, I actually followed the recipe minus the fennel and then just seasoned to taste. Used no boil noodles and they came out perfectly. I also left out the sausage cuz the bf doesn't like it and just used 1 lb ground beef, which turned out fine and plenty meaty for us!! I could not be more pleases with the result and neither could the bf :)

Taco Seasoning I

Oh my goodness...this was amazing!! I used the whole recipe on 3 large, diced chicken breasts for tacos and it was so good!! I made a few changes from lack of ingredients, but not many. I did not have sea salt, so I subbed table salt only cut the amount in half. I also omitted the pepper because I just didn't feel like putting it in for some reason and I didn't miss it at all. I also was out of red pepper flakes, so I subbed 1/8 tsp cayenne and the spice was perfect. Buying taco seasoning seems really pointless when there is an amazing recipe for it you can throw together in a few minutes that doesn't contain chemicals or an overwhelming amount of salt. Thanks so much for the post. Will use for the rest of my life :)
