Chicken Pasta Salad with Cashews and Dried Cranberries

Spruced Up Mashed Potatoes

Fig and Banana Loaf

My only changes were to use regular milk instead of soy, and I chopped and soaked my figs in the microwave for a minute in a little water to soften them up. It made a dense, moist loaf, pefectly, lightly sweet. I used the olive oil and didn't notice a flavor change, but appreciated the healthier oil ingredient. Recipe is a keeper, thanks!

Careful after throwing the almonds in, once they start to toast, they cook very quickly. Mine are a little too toasty. Would make again, thanks for the recipe!

Ten Minute Szechuan Chicken

I recommend giving this recipe a try if you are serving it over a seasoned rice stir fry, since it has no sauce of its own. I used some dried Annaheim chile's from my garden instread of cayenne pepper, otherwise followed the recipe exactly and would make it again. Nice to be able to make it yourself and control the fat content.

Broccoli Chicken Casserole II

I gave my leftovers to the neighbor, but I THINK I may have liked it if I didn't follow the advice to add extra curry, I should have cut it back from the 1t even, so it's a matter of personal taste, I did take someones advice and stirred in brown rice, which seemed to make it a more complete meal. May try again with WAY less curry.

If your bananas are very ripe and sweet, you may be able to cut back on the white sugar a bit. I loved the recipe although a little to sweet for my own taste. Will make again, thanks for sharing.

Shrimp and Crab Enchiladas

If you like suggestions, I made mine generously stuffed with 2-6oz cans crab, 1.5 lbs shrimp, 8 oz monterey jack, 4 oz jalepeno jack and 4 oz cream cheeses (mmmmm, cheese). It made 7-12inch enchilladas. They were....awesome.

Macaroni and Cheese IV

I also would not call it macaroni and cheese, but I WOULD call it good. Used Ro-Tel tomoatoes as someone suggested. (the recipe is incorrect, it needs only 1-12oz box of pasta, probably just a typo), and I did saute' the optional onion in with the meat. Thanks for this recipe, I have a feeling the leftovers will taste even better once they absorb more tomato juice.

Watermelon Lemonade

Was too sweet, but great concept to use watermelon juice, did the vodka was a huge hit. Less sugar and more lemon would have made it a five star, but I realize that is just personal taste, and how sweet your watermelon is would impact it also.
