Feta Cheese Turkey Burgers

Reviewed: Apr. 17, 2012
So quick and easy! Followed the recipe almost exactly, just added 1 large clove of crushed garlic and some lemon pepper seasoning. I cooked mine in a grill pan over med-high heat for about 4 minutes on each side (I made 5 patties). Served it naked with a side if pierogies. Next time, I'm going to make the meat mixture into meatballs to serve with a Mediterranean pasta dish. Stay tuned!

No Bake Chocolate Oat Bars

Reviewed: Mar. 6, 2011
FANTASTIC! Quicky, easy, and so addictive. Put peanut butter and choc chips in a glass bowl in microwave for about 30 seconds, stirred it all up, poured it in. Used only 1/2 c margarine, and as other reviewers stated, the crust is a bit too crumbly, so I might increase it next time. Also used 3/4 c peanut butter (for me, more is ALWAYS more when it comes to PB :). Yum!

Company Couscous

Reviewed: Feb. 25, 2011
This is a SUPER fantastic, super quick & easy, and super tasty recipe! I followed it almost exactly (which, admittedly, I never do). Substitutions: Boiled couscous in Low-Sodium Vegetable Broth; used about 1/4 of a yellow onion instead of green onion; used frozen chopped basil instead of fresh basil. Also, I used more like a couple drizzles of balsamic (than a dash), which at first I thought I had over-done, but actually any less would have been too bland! 5 star recipe for sure!

Summer Salad with Cumin-Crusted Salmon

Reviewed: Aug. 20, 2009
Found this recipe because I had some frozen salmon and lettuce that I wanted to get rid of. Was highly skeptical at first considering what was, to me, a surprising combination of ingredients, but it was absolutely FANTASTIC! Used sliced almonds instead of pine nuts because that's what I had lying around, and added avocado per previous suggestions. Pan-seared the frozen salmon; this recipe seems perfect for fish that isn't fresh since there are so many flavors involved. Made this yesterday for my boyfriend, and ate the leftover salad (sans salmon) for lunch today. I swear it was even better left over! Quick, easy, delicious: will be adding this to my regular recipe rotation :)
