Potato Leek Soup III

Like many of the reviewers, I only used half the butter, and I used half-and-half instead of heavy cream. And it was still really rich! I used russet potatoes, because it was what I had on hand. I think it really would've made a big difference to use yukon golds. Russets are flaky, while golds are creamy, which would go much better with the theme of the soup.

Asian Fire Meat

I found this recipe to be very good, but too salty. Next time I'd reduce the soy sauce a lot. I didn't have leeks or carrots, and I used regular yellow onions.

Fresh Asparagus Soup

I thought this was pretty good. My husband really liked it. I think I might have used too much onion. Definitely don't go overboard on the onions, since they aren't sauteed in this recipe and can be strong. I used 2% milk instead of soy.

Best roasted potatoes I've tasted! The spice ratios were just perfect, which surprised me since they were so easy – 1 Tbsp each.

Mushroom Lentil Barley Stew

Pretty good hearty winter stew. My only complaint is that it was a little bland. Maybe adding some wine or lemon or something would spice it up. I served it topped with parmesan, which helped.

Greek-Style Rib Eye Steaks

I found this recipe hard to follow. I wasn't sure how high to have the skillet, but even at a pretty low temperature, the outsides almost burned. Meanwhile, the insides didn't get cooked.

Italian Sausage and Zucchini

This was excellent. Granted, I made quite a few changes from the recipe. My modifications: added oregano, basil, and sage; used brocolli and mushrooms instead of zucchini; added garlic; used 2 cans diced tomatoes. I served over rice.
