Blueberry Crumb Pie

Reviewed: Jun. 19, 2012
Oh WOW!! This pie is amazing! I used one frozen 12 oz bag of mixed berries and the remaining amount used fresh blueberries. Only used maybe one teaspoon of lemon zest. Also added more flour as others suggested. I didn't have rolled oats but I had a basic vanilla almond granola and used that in its place... Quite possibly the best berry pie I have ever had!

Broccoli Potato Soup

Reviewed: Jan. 31, 2012
Definitely be sure to add some extra chunks of potato, be very generous with the cheese, add a little more milk and water - and you've got perfection in a bowl. Be sure to cook it long enough that the soup thickens... YUM!!!!

Broccoli and Cheddar Quiche

Reviewed: Oct. 16, 2011
Phenomenal!! Steamed the broccoli for about 7 minutes before mixing it in, ommitted the mushrooms and onions, put diced pre-cooked ham in their place & used 1 1/2 cups shredded monterey jack/cheddar mix... WOW! First time making quiche & it was PERFECT! :)

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Jul. 13, 2011
Easy & soo tasty! I left out the sour cream and substituted milk just on the bottom layer. I also left out the coriander and subbed onion powder, garlic, and oregano. Also added black olives. My fiance had 4th helpings!! :)

Tasty Green Beans

Reviewed: May 15, 2011
SUCH a great green bean recipe! Easy to play around with... Have not used the boullion yet, and I see no need for it... If you're in a salty mood - add all the soy sauce that it calls for... If not, add less... Have used dried minced onions and have used fresh, chopped onions -- either way, turns out great... SO good! :)

Apple Dumplings

Made my own biscuits with Bisquick (would have been MUCH easier with canned biscuits, I think!) however, that made them a little healthier as I just added fat-free milk for the mix... Delicious, though!! Great recipe!

Chocolate Frosting I

Reviewed: Mar. 17, 2011
Would give these 5 stars but had to follow others' advice and use way less powdered sugar (2 1/2 cups). Also added more cocoa as others suggested. Hand made with a wisk and absolutely delicious! Perfect topper for Peanut Butter Brownies...

Chewy Peanut Butter Brownies

Reviewed: Mar. 14, 2011
These were a big hit at work! Doubled the recipe but used only 2 eggs, probably could have used 3 but definitely not 4. Used chocolate frosting on the top - can't imagine how they'd taste without it. Decadent and delicious!

These were good, but if I'm going to have pancakes I'd prefer the naughty ones!

Salmon Cakes I

Reviewed: Mar. 8, 2011
I was looking for something different and tasty to make with my leftover salmon and this was it!! I used a little less potato as recommended by others and added the onions as others had but I softened them by simmering in the oil for about 15 mins which added excellent taste and consistency as well as adding nice flavor to the oil! I topped them with teriyaki sauce and they were awesome!

Orange Oatmeal Muffins

Delicious! I made them a bit healthier by reducing the amount of sugar, used only a tbsp butter with 1/2 cup applesauce, added finely grated carrots and a couple handfuls of cranberries. My bf topped them with pecans for esthetics ;)

Chicken Potpie

Reviewed: Oct. 28, 2010
Really good, but don't repeat my mistake and add broccoli in the pie... Totally took over the flavors. Other changes: Simmered 4 garlic cloves in the butter rather than onions (awesome for us garlic lovers!) and used canned peas & corn... Frozen may have been better. Pretty dang good for my very first pot pie! (Made the crust from scratch and everything!)
