Black Bean and Salsa Soup

I have a cousin who introduced my to Panera Bread's black bean soup and so when I saw this recipe I decided to try it for her. I did saute an onion and added garlic powder before adding the beans. I used 2 larger cans of beans that I found in the Latino section of the store. Since I had more beans than was called for I added the whole can of vegetable broth and the whole jar of medium heat salsa. Whoa! It was too hot. I mashed it with my potato masher until I got the consistency I wanted. But next time I'll use mild salsa. My cousin, my husband, and I did think it was very good, and I thought it was very easy. She didn't say if it tasted like Panera's, but she really like it.

Alison's Slow Cooker Vegetable Beef Soup

I followed the directions exactly and we really liked it. But next time I will only add 1 teaspoon of salt and 3 cups of water. The meat was very tender and the soup looked so hardy. It was really great and so easy. It's the best recipe I have of all the veggie soup ones.

Sunday's Apple Pie

I used Honey Crisp apples (I had 13 small ones) and 1 c. sugar because of the number of apples. Used the same amount of cinnamon, flour, and butter. I also bought the pie crust and put all the apples in a 10 inch pie plate. They mounded up high but cooked down and looked great. My husband loved it. I'll do this one again.
