Creamy Chicken and Wild Rice Soup

The recipe made as original is very good, but some additions push it into 5 star & pay for it at a restaurant. here's my changes. I fried up 6 pieces of bacon, then sautéed 1/2 an onion, same amount of celery & carrots & 8 oz of sliced mushrooms plus garlic in the bacon grease. My family felt that the one box of Rice a Roni wasn't enough, so I added a 2nd. The white sauce made w/ the flour, Half & half needed a bit more seasoning, so I added a grating of nutmeg, a handful of sharp shredded cheddar and my secret ingredient, 2 shakes of ancho chile powder, which doesn't add any heat but adds a depth of flavor that you can't explain. Oh & don't forget to dice the bacon & add it in! YUMMY!

Easy Pizza Sauce III

Hubbie liked this better than the store bought stuff I used. I did make some minor changes according to other reviewers. Oregano & basil at 2 tsp each; onion powder 1/2 tsp; & 1/2 tsp of sugar. This amount made about 3 large pizzas worth, so I'll double it & keep in a large canning jar

World's Best Lasagna

This IS the best lasagna ever & I make it at least once a month. But I did make some changes. I upped the ground beef to 1-1.25 lbs (whatever the pkg size is) because my family really likes the meat sauce. I doubled the amount of garlic for the same reason. Reduced sugar by half (I'm dieting) & salt to 1 tsp (hubbie's on a low sodium diet). Finally I used an extra deep 13x9 casserole to keep it all in. YUMMMMMM

Broiled Tilapia Parmesan

Had this last night & loved it. Hubbie has to have lower sodium, so I changed celery salt to celery seed. Also added 1/4 tsp of cracked red pepper flakes. My oh my it was good!

Marinated Pork Chops

This marinade was really good. I added one more large clove of garlic & used red wine vinegar. Everyone ate all the chops & the next day they went well as the meat in pork chops too! Will definitely make these again

Cha Cha's White Chicken Chili

Excellent recipe! Based on other reviewers I made these changes: pureed 1 can of cannelini beans, used 1 can each of Rotel, corn, cannelini, black beans & a can of cream of chicken soup to thicken it up. Also reduced the cayenne to 1/4 tsp & gave 2 dashes of Chipotle Tabasco for some smokey flavor. Served it with diced thai chiles for mny chile heads, diced poblano for milder, cilantro & sliced cherry tomtatoes. It was wonderful! thank you so much for this recipe!

Gerry's Chicken Enchiladas

This was an outstanding recipe! The flavor was just so good that everyone had seconds & hubbie & kids took 3rds for lunch today! Thanks Gerry! Now, here's the few changes I made: I was using leftover turkey, so I marinated it in the Rotel & mexican stewed tomatoes all afternoon to give it some zing. I used 4 real small poblano's & forgot the jalapeño (oops). Since I didn't have any cream, I simply heated the tortillas in the microwave between damp paper towels for about 20 seconds. The recipe ended up making a dozen enchiladas with only one leftover. Guess who gets that for lunch!? Thanks again Gerry, it's a GREAT recipe!

Mama's Asian Chicken and Rice

Excellent recipe & wonderful flavor. I read the reviews & doubled the sauce, but not the cornstarch slurry. It made it perfect. Only trouble was that my family liked it so much there was nothing leftover. (and this was with one of my kids out of town) Next time I'm going to up the recipe to 2.5-3 lbs of chicken!

Oven Pot Roast

I read the reviews & made some changes based on what I read. The roast turned out moist & so flavorful. Last night, it became my favorite pot roast recipe!!!! Here's the changes: add 1 tsp of Emeril's creole seasoning to the flour; cut the butter to 2 T & added 2 T of EVOO to decrease the chance of burning; used 1 full envelope of non-sodium dry onion soup mix (I make a copycat recipe); tossed in 4 leftover sprigs of fresh thyme; doubled the cans of soup & didn't have vermouth so I used cabernet. Finally thickened the gravy w/ 2 T of room temp butter & 2 T of flour mashed together ..instant thickening & a lovely glaze to the gravy.

Easy Slow Cooker French Dip

I'm from LA where the French Dip originated at Phillipe's. They always use carrots, celery & onions as they cook the meat & to flavor the au jus. So I placed two carrots (cut in 1/2 crosswise), 2 celery stalks & a bay leaf. (I didn't serve these, just for flavoring.) I didn't have condensed French onion soup, so I used a packet of dry. I figured there was enough onion from that. I also took other raters' advice & used only 1/2 the beer. It was OUTSTANDING! My father in law said it was as good as Phillipe's! and the only complaint was how little leftovers there were for lunch the next day! THANK YOU!

Thai Ginger Chicken (Gai Pad King)

A really outstanding flavor!!! Following the directions of other reviewers, I changed the fish sauce & oyster sauce to 2 T & upped the mushrooms to 1 C as I had that much leftover. I didn't use any additional salt, either. It was so very good! My family asked me to make a double batch next time so they can have leftovers!

Sweet Grilled Chicken Sandwich

Gourmet Mushroom Risotto

First, the amount of mushrooms is a typo, use only 8 oz of each. I added one clove of garlic, finely minced, but made no other changes. My hubbie says this recipe is better than restaurant quality!!! The whole family LOVES it!!! Thank you!

Grilled Asian Ginger Pork Chops

Only change was adding 2 green onions to the marinade. Flavor was very strongly orange, yet tasty. Next time I'll increase ginger to 3 T, garlic to 1 T or more.

Sweet Restaurant Slaw

Love this recipe, but I did make some changes: used Miracle Whip Light, used only 1 Tablespoon of olive oil, reduced sugar to 1/4 C, used apple cider vinegar vs plain white, and used 1/4 tsp EACH of poppy & celery seeds. This recipe tastes very much like the expensive Marie's Cole Slaw dressing that I buy. Thank you Sandi!

Catherine's Spicy Chicken Soup

Fabulous recipe. Only made small changes due to making it in a crockpot. First used only 1 qt of water, left out the whole tomatoes, added 1 tsp of cumin, used only 1/2 C of sour cream & added a couple handfuls of tortilla chips, crushed to thicken. My family loved it & asked to have the leftovers tonight!

Hearty Ham Casserole

My family loved it. I made changes according to other posters: fiesta corn; 1/3 c each of onions & celery sauteed in butter; a bag of frozen broccoli; 1/2 tsp of chili powder & 1/4 tsp of garlic powder & all cheddar cheese instead of velveeta. Everyone had seconds & my 10 yr old saved a serving for her breakfast tomorrow!

Easter Breakfast Casserole

My hubbie had 4 servings! That said, I did make some changes. I made a half sized serving in an 8x8 pan, but used the full pound of bacon. My family are carnivores! I used the O'Brien hash browns, pre-cooked to give more texture & made the bacon the night before to ease Xmas morning for me. I also used 1/4 tsp of Emeril's creole seasoning & 4 grinds of pepper on the hash browns & a dash more in the egg mix. It was outstanding & my family was poking in the fridge asking where the leftovers were... and there weren't any! Hubbie asked me to make it again for New Years Day! He said that I finally found the breakfast casserole to make everyone happy!
