Baked Zucchini Chips

These are yummy! I added 1/8 tsp garlic powder & 1/8 tsp salt to the mixture. I sprayed the tops of them with cooking spray. They are not super crispy but very satisfying and I figured out with 60 pieces, they are only 1 Weight Watchers old points system for 10 pieces.

Flourless Peanut Butter Cookies

These were delicious! I used natural peanut butter. I also made them into kissy cookies by rolling the rolling the dough in sugar before baking and then the last few minutes I pressed a Hershey's kiss into the cookie. Yum!

Mom's Zucchini Bread

This was absolutely delicious! I made it for breakfast at church and it got devoured, and then we as a family ate the entire other loaf in one day. :-) I had to send my husband to the store to buy some more zucchini to make it again. I did substitute half of the oil with unsweetened applesauce, and I used canola oil instead of vegetable.

Salsa Chicken Rice Casserole

My family really enjoyed this recipe a lot. I did modify it a little bit. I used Colby & Monterey Jack cheese instead of the Monterey Jack since it was already preshredded at the store. I also used hot salsa because it was what I had on hand, and I used 1 Tbsp dried minced onion instead of the fresh onion. I also combined all the ingredients instead of layering it except for half the cheese which I put on top. I will definitely be making this one again! Thanks for the recipe!

Pesto Chicken Florentine

I loved this dish! I did alter the amounts some though. I used a jar of premade Alfredo sauce and 4 Tbsp basil pesto. I also doubled the penne pasta and used 2 Tbsp Parmesan cheese. I didn't consider these major changes... just some preferences.

Spinach Tomato Tortellini

I made this the other night, and it was really delicious! I love tortellini anyway, but this is a really yummy and elegant way to serve it. The only thing I would change next time is I would put the tomatoes and spinach in the food processor just into chopped only because my 2 and 5 year old boys didn't care for the chunks of tomato and spinach in it. If I didn't have young children though, I would leave it just the way it is. Definitely going to be a keeper around here! Thanks for sharing!

Brown Rice and Black Bean Casserole

I left out the oil and mushrooms, and I used cheddar cheese and dried minced onion instead of fresh. It was so yummy! I love how healthy and delicious this meal is! Definitely a keeper in our house!

Fierro Chicken

I made this last night upon recommendation of a friend, and I served with vigo yellow rice upon her recommendation. I actually made the yellow rice, cut up the chicken once it was cooked and mixed it all together. It was very yummy, but I think next time I will try cutting it up and serving it over white or brown rice for a variation.
