About this Cook
I learned how to cook from my father when I was little. I cooked for a family of 6 by the time I was 10 years old. And except for dirty dishes, I love cooking. Most of my meals are "delicious and nutritious". My kids will vouch. They even love vegetables without disguising them.

My best friend says: I can make a great meal even out of chicken poop, because I invent meals from what I have available and they almost always come out great.

homemade buscuits (hard as a rock), homemade pie crusts that fall apart.

Zucchini Corn Fritters
The most delicious part of the meal. I did not have cumin and it didn't need it. This recipe is perfect. Beware!! You can't eat just one or even two. I use very little oil to fry these. Crispy outside, light and perfectly sweetened inside. Not greasy and makes a huge batch that an be used later on.

Southern Peach Cobbler
This was excellent. I changed it just a bit. Instead of 1 cup white sugar, I put 3/4 and I used fresh home grown peaches with a squirt of lemon. I mixed the peaches with the batter in the baking dish, then topped with brown sugar which made it crunchy on top. To die for! OH YEA, I added cinnamon and nutmeg to the flour. I did not have self rising flour so I put in a tsp of baking soda.

Empanadas (Beef Turnovers)
Now this is Empanada. Those fruity ones cannot compare to what Empanada is really supposed to be.
