Chef John's Italian Meatballs
This recipe is a keeper! I don't really like meatballs but since my husband does and requested spaghetti & meatballs for dinner, I needed to find a good, simple recipe. I stuck fairly closely to the recipe, using only 90% lean ground beef, omitting the onions, using Italian-seasoned breadcrumbs, and using extra Parmesan and red pepper. I found it easier to use my hands to incorporate the ingredients rather than using a spoon or spatula. I refrigerated the meat for just about 30 minutes and it was very easy to work with. Since there are just two of us, I halved the recipe and yielded 32 1.5" meatballs. Thanks for sharing this recipe - I'll definitely use it again!
