Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

This was awesome. I didn't do exactly as written. I used garlic powder instead of 16 cloves garlic. I did 3 slits instead of just one. I used Riesling instead of port. I will not go out and buy ingredients when i have perfectly good substitutes. I did this on a 2.5 lb roast too rather than a 8lb. We had seconds and thirds! I served with white rice this was so yummy!

Cream of Cauliflower Soup II

at first I wasn't overly fond of this soup...but the more I ate it the more I liked it! I did everything exactly as it is written except i think I used 3 carrots instead of two. I used skim milk and homemade chicken broth. I am making it again today. And it freezes and thaws really well. I use 1pt ball canning jars and store it in the freezer.

Grilled Lemon Chicken

This was really good! I didn't have dijon mustard I used spicy brown and I also used thighs and legs instead of breast. I have it in my recipe box and will make again.

Sam's Famous Carrot Cake

I liked this cake, it wasn't very sweet, I used a basic cream cheese frosting... I did manage to try and make it healthier...I used 1/2c palm sugar, 1/2c demerara sugar, 1/2c organic sugar and replaced vegetable oil with coconut oil then 1 cup whole wheat white flour and 1 cup cake flour...I should have just done all whole wheat flour since it is a heavy cake anyway and spiced up with Cinnamon. I didn't add the raisins since we don't care for them in cakes and used pecans instead of walnuts. I probably used 2.5 c of carrots too that were shredded on the thicker grate. I also made the cake the day before so everything had time to meld together.

Cottage Pudding (Cake for Strawberry Shortcake)

GREASE AND FLOUR YOUR PANS!!! It just says grease in the instructions. I had to make a second double batch because it stuck to the both pans. BUT ~~~This was so good! I doubled the recipe because I was going to do more of a double layer cake presentation with strawberries and whip cream. My son wants it as his birthday cake with frosting (not a berries and whip cream kind of kid). It did take longer than the time it says, but then again, I had to lower my oven temp by 25 degrees because I was using darker non stick pans.

Baked Ziti with Sausage

Amish Sugar Cakes

Not a fan. First, DO NOT use a Silpat, use the greased cookie sheetand REGREASE every time (I even have no stick NEWer cookie sheets!). Second don't make them too big because if you can't get your spatula under it it will stick to the pan. These don't have much flavor and they are so light and airy that they fall apart way too easily. I was actually looking for a cookie without a lot of flavor (I have a plain kid) but these are disappointing, and I am kinda annoyed I wasted my cup of buttermilk and 2 cups of sugar on them.

Cranberry Sauce

I made this as written except I put in a cinnamon stick at the end, couldn't really tell it was there. I had so much left over not hardly anyone even tried it. So I used it in another dish on here Cranberry Dip and mixed it with apricot preserves and I plan on serving it at my christmas party. I still have some leftover I am mixing it with chili sauce and grape jelly for cocktail dip.

Swedish Meatballs (Svenska Kottbullar)

This was really good. Had to use half and half instead of sour cream and heavy cream and some whole wheat bread instead of white because that is all I had. It was really good with the exception of the meatballs falling apart, but I think it was because the bread I used was a bit denser so it didn't bind well because of that.

Delicious Raspberry Oatmeal Cookie Bars

These were really good. I did add about 1/3 of a cup of chopped almonds and should have removed 1/3 of a cup of oats so they were a little bit crumbly-but that was my fault not the recipe. I also used Bing Cherry Jam from the Ball canning recipe book with 1/2t of almond extract added to it. Great flavors. My husband said he didn't care for them, though he had no problem eating them. He said he didn't like the cherry flavor-whatever, he likes it good enough in his yogurt. He just isn't into fruity desserts.

Delicious Ham and Potato Soup

This was really good. I had a lot of a spiral ham left so I went ahead and made the broth from it. I also added green beans near the end and I used evaporated milk and to thicken the soup even more I added 2 packs of instant potatoes (great thickener too) because I didn't want to add more flour and butter (only used 5T each). Also my ham was so incredibly salty that I didn't add any salt to this recipe at all-or the stock when I made it. I ended up with about 10qts of soup when all was said and done.

Easy Lemon Bars

Granny's Cherokee Casserole

Loved it and so did my husband and son. I didn't have cream of mushroom so I used cream of celery, instead of the oregano I used italian seasoning and montery jack colby cheese for american. I also didn't have instant rice so I used regular rice and added 2 cups of water to the dish and cooked it all on the stove so I didn't have to dirty another dish.

Barbeque Pork Two Ways

So good! I only changed the ketchup amount because I didn't want to use 2 cups and use up all my ketchup. I used 3/4C ketchup, 8 oz can of tomato sauce and 1/2 c bbq sauce that I don't like to try and use it. It turned out great!

Golden Sweet Cornbread

I will admit I don't care for cornbread. I do like it when mixed with a white/yellow cake mix. I didn't have a box of cornbread mix to mix with a white cake mix so I used this recipe and used half of a prepared boxed white cake mix. I replaced the white flour in this recipe with whole wheat pastry flour. It was delicious! I also liked that it didn't make a huge amount (since I had add it to the cake mix).

Baked Potato Soup I

excellent! I used skim milk and atleast 10 cups to the rue amount they gave and it was very thick still. I did try and smoosh some potatoes with the masher but they just stuck to the bottom. I used a lot of little potatoes, a measurement by pounds instead of just 4 large potatoes would be nice.
