Easy Lemon Bars

LOVE these! My mom used to make these back in the 80's and she had gotten the recipe from a magazine I think. I am so glad I found this recipe on here! I like to add the lemon zest and juice from one lemon too!

Cream Cheese Pound Cake III

I don't like shortbread and had a bunch of strawberries so I decided to try this pound cake since cream cheese goes so well with strawberries. This had such a nice texture when done and dough was tastey too! I was going to cut the recipe in half but accidently added too much butter so I had to add more cream cheese, I ended up using 3- 3oz packs. I put mine in 2- 9" loaf pans and they took a long time to bake. It was atleast an hour if not longer. I am not sure because I would add a few minutes then check again. Turned out perfect though. I served the sugared strawberries on top. YUM!

Buttermilk Bread II

Awesome! I had a bunch of buttermilk to use and I found this recipe. We love homemade bread so this was great. I switched sugar for honey and added 1/2c oat bran and switched out 2 cups flour for white whole wheat flour. The bread rises nice and high. I made mine in to hamburger/sandwich rolls and knots. Today I will make a loaf and more rolls since I still have a bunch of buttermilk to use. Definately a keeper!

Cream Cheese Pie

This was SO GOOD. Followed the recipe but was unsure what to do after the first baking. Took it out let it sit while the oven heated to 450 and made the sour cream topping. After the second baking I let it cool and put it in the freezer for a couple of hours because I didn't think it would get cold quick enough. Then I put it in the frige until we were ready to serve...EVERYONE LOVE IT! This is for sure a keeper!

French Dip Sandwiches

My husband LOVED this! I didn't use a roast because I was not going to go buy one just for this. I used smaller pieces of beef since I had coupons to use up and that was the cheapest way. I also threw in the remaining prime rib we had left over from Christmas dinner. He loved the liquid it is dipped in. Now I need to find a beef roast on sale to use for this!

Amish Sugar Cakes

Not a fan. First, DO NOT use a Silpat, use the greased cookie sheetand REGREASE every time (I even have no stick NEWer cookie sheets!). Second don't make them too big because if you can't get your spatula under it it will stick to the pan. These don't have much flavor and they are so light and airy that they fall apart way too easily. I was actually looking for a cookie without a lot of flavor (I have a plain kid) but these are disappointing, and I am kinda annoyed I wasted my cup of buttermilk and 2 cups of sugar on them.

Granny's Cherokee Casserole

Loved it and so did my husband and son. I didn't have cream of mushroom so I used cream of celery, instead of the oregano I used italian seasoning and montery jack colby cheese for american. I also didn't have instant rice so I used regular rice and added 2 cups of water to the dish and cooked it all on the stove so I didn't have to dirty another dish.

No Bake Cookies V

I love these cookies! I used butter instead of margerine and creamy pb instead of crunchy because that is what I had. Cooked mine exactly how it says for one minute after it boils (which to me means rolling boil, otherwise it would say starts to boil if they wanted it sooner).

Wonderful Banana Cake

I made these into cupcakes using 3 bananas instead of two. I just ate one and it was really good. Different when you are used to banana bread though. I plan on frosting with cream cheese frosting. This is a VERY light cake. I also baked it according to the package directions-rather than using the cold oven method.

Sicilian Pineapple Pork Roast

I was leary but this was really good! I did lighten up slightly on the rosemary and used fresh sage (because that is what I had). I also used 5 plum tomatoes skinned and seeded because I didn't have the canned. I forgot to add the onion until 1 hour into the cooking but it still all melted into the sauce. For no added liquid, this surely made a lot of juice. I also made mine in a cast iron dutch oven and thickened the sauce with a mixture of corn starch and white wine (2T each). I will most definately make this again.

Easy Batter Fruit Cobbler

This is so addicting! I used 3T butter and 3.5 cups of fruit (strawberries and blueberries). Yes it is kinda mushy in the middle, but to me it was kinda more like pudding and it may not have been so bad had the majority of the fruit end up there. It was still really good and I would make it again!

Barbeque Pork Two Ways

So good! I only changed the ketchup amount because I didn't want to use 2 cups and use up all my ketchup. I used 3/4C ketchup, 8 oz can of tomato sauce and 1/2 c bbq sauce that I don't like to try and use it. It turned out great!
