Restaurant Style Beef and Broccoli

I made this tonight and hubby loved it. I didn't add the sugar and switched rice wine vinegar for the sherry. I made a different recipe for lunch and didn't like it as well, so I decided to mince the ginger and garlic and add them to the meat marinade. Foolishly I added 3 cloves of garlic, I wish I stuck to one. I used broccolini and carrots (I didn't have maybe 1/2 lb of broccoli) instead of broccoli, I wish i had gone to the store to get the 1.5 lbs of broccoli. Hubby was happy to have extra sauce but I wished I had more broccoli.

Maple Banana Bread

First let me say I hate it when people change a recipe and then rate it poorly. But I did change the recipe however I do love it. I replaced the butter with coconut oil (I'm dairy free), vanilla extract instead of maple extract (didn't have any), replaced milk with almond milk, added 1/2t salt and substituted whole wheat pastry flour for the white flour. I also ditched the sugar and just added a cup of walnuts and about 3/4 c of dairy free chocolate chips and to top it off I made muffins (filled tins 3/4 full baked 20 minutes). These aren't real sweet but that's fine, I wanted a muffin with a lot less refined sugar (so I only had what was in the chocolate chips) and ended up with a much healthier muffin that still is a treat and doesn't taste too healthy.

Mom's Chocolate Chip Cookies

I just made these today after my mom and uncle recommended them. I switched out 1/2 butter for shortening (It will help the cookie not spread and not be so crispy it's how I always make my cookies) and added 1/4t salt because salt should be added to sweet desserts (not to mention all other cookie recipes have it!). Personally I am dairy free so I diidn't even try them but my kids love them. It's a nice switch up from the usual chocolate chip cookies I make, well I guess, but again, I didn't try any.

Golden Sweet Cornbread

I will admit I don't care for cornbread. I do like it when mixed with a white/yellow cake mix. I didn't have a box of cornbread mix to mix with a white cake mix so I used this recipe and used half of a prepared boxed white cake mix. I replaced the white flour in this recipe with whole wheat pastry flour. It was delicious! I also liked that it didn't make a huge amount (since I had add it to the cake mix).

Frosted Pecan Bites

THESE ARE SO GOOD! Last year I made these and took them to a Christmas party for a Chinese Christmas present thing we did...They were fought over and kept on getting stolen. I just made them again for this Christmas and I need to go buy more pecans they are so stinking good! Also I cooked them exactly as stated (except I roasted mine at a higher temp accidentally) and mine didn't burn at all. Every time I have made them they haven't burnt, you do have to make sure you give them a good stir every 10 minutes. I have also used 2 totally different ovens (I got a new one in April) and yet never had a problem.

Easy Homemade Vanilla Ice Cream

Emily's Famous Hash Browns

I have to say this didn't turn out well. The potatoes burnt before the insides cooked...I don't know what I didn't wrong, I have the hardest time with hash browns. The unburnt part was flavorless.

Cranberry Sauce

I made this as written except I put in a cinnamon stick at the end, couldn't really tell it was there. I had so much left over not hardly anyone even tried it. So I used it in another dish on here Cranberry Dip and mixed it with apricot preserves and I plan on serving it at my christmas party. I still have some leftover I am mixing it with chili sauce and grape jelly for cocktail dip.

Yummy Sweet Potato Casserole

Those who ate this loved it! They were upset there wasn't more to eat as leftovers. I used 5 sweet potatoes and I also baked them and then mixed them with the rest of the ingredients. I used a slightly smaller (old pyrex rectangular dish from refrigerator set) because it seemed like 9x13 would be too big. I also only used half the milk called for and I used Japanese Sweet potatoes, they are yellow not orange, but they said they taste the same. I don't like sweet potatoes so I didn't even try it-though they said I should.

Swedish Meatballs (Svenska Kottbullar)

This was really good. Had to use half and half instead of sour cream and heavy cream and some whole wheat bread instead of white because that is all I had. It was really good with the exception of the meatballs falling apart, but I think it was because the bread I used was a bit denser so it didn't bind well because of that.

Real Strawberry Frosting

I made this using strawberry jam instead of fresh strawberries...it was great! It wasn't runny, it was how frosting should be. It barely covered a 2 layer 9 inch cake though. Also add a pinch of salt when you mix it, all frostings should have at least a pinch of salt otherwise it tastes like powdered sugar.

Baked Potato Soup I

excellent! I used skim milk and atleast 10 cups to the rue amount they gave and it was very thick still. I did try and smoosh some potatoes with the masher but they just stuck to the bottom. I used a lot of little potatoes, a measurement by pounds instead of just 4 large potatoes would be nice.

Cream of Cauliflower Soup II

at first I wasn't overly fond of this soup...but the more I ate it the more I liked it! I did everything exactly as it is written except i think I used 3 carrots instead of two. I used skim milk and homemade chicken broth. I am making it again today. And it freezes and thaws really well. I use 1pt ball canning jars and store it in the freezer.

Chocolate Chip Banana Muffins

These were really good! I only changed 4 things, I used 3/4c yogurt and 1/4 coconut oil and carob chips instead of chocolate chips. Because I used freshly milled flours (soft wheat and oat groats) I let the flours soak in the yogurt to soften up the bran for 30-40 minutes. Works perfectly!

Cracked Sugar Cookies I

These were so good! The dough tastes as good as the cookies...The only thing I did different was substitute half the ap flour for freshly ground white wheat. Can't wait to try them with whole wheat pastry flour!

Sam's Famous Carrot Cake

I liked this cake, it wasn't very sweet, I used a basic cream cheese frosting... I did manage to try and make it healthier...I used 1/2c palm sugar, 1/2c demerara sugar, 1/2c organic sugar and replaced vegetable oil with coconut oil then 1 cup whole wheat white flour and 1 cup cake flour...I should have just done all whole wheat flour since it is a heavy cake anyway and spiced up with Cinnamon. I didn't add the raisins since we don't care for them in cakes and used pecans instead of walnuts. I probably used 2.5 c of carrots too that were shredded on the thicker grate. I also made the cake the day before so everything had time to meld together.

Oatmeal Peanut Butter Cookies

These were awesome! I did everything like listed except I did add 1t vanilla and used whole wheat pastry flour instead of white (good time to slip it in with the peanut butter being so strong). I think there could stand to be 1 less teaspoon of soda, my cookies are kinda falling apart because they are too airy. For 1 cup of brown sugar you shouldn't need more than 1t of soda. Crumbly and all these are great tasting cookies...
