Spicy Vegan Potato Curry
I did add more veggies, as I like quite a bit in my dishes. I added carrot, pea pods, mushrooms, yellow squash, zucchini, a couple chilies as well because I love spicy food. I used potatoes, but not chick peas or regular peas because I didn't have them on hand. I also didn't have coconut milk at the house, but I did have coconut almond milk, so I used that instead. It was very spicy, which I thought was great. I added a bit more curry powder and a little less salt. I will make this again, I already want to eat the left-overs, and I just ate about 2.5hrs ago.

Stuffed Tomatoes
I'm giving it 5 stars because I love the idea, but I altered the recipe to fit my tastes; the recipe is versatile enough to do this. I had a nice firm tomato, so I just diced the insides instead of using any canned tomatoes. I added bell pepper and mushrooms as I do not eat meat. I did use cheddar cheese, but instead of break crumbs I crushed a few croutons because they were seasoned. I didn't add many croutons and I don't think the recipe would have suffered without them. Still, that's up to personal taste. When I was eating a threw a homemade falafel on the top just because it was there. I loved it. Next time, I would think of replacing the sausage with falafel pieces. Now, I am thinking of doing this with stuffed bell peppers as well. :)

Cherry Chicken Lettuce Wraps
I am a single woman and unfortunately didn't have several ingredients that the recipe called for because I wouldn't use them in time. However, I did cook with what I had and discovered that the recipe is versatile because it was still tasty. I didn't have the cherries and I felt that the sweet flavor they would have provided would have made these excellent. This is what I used to substitute: white vinegar, ground ginger, red onion (I did cook the onion a bit with the chicken to soften a bit and so it could absorb some of the other flavors and not be as strong). Also, instead of mixing everything in a bowl I just threw it in the pan while it was on medium heat and heated it for probably 30 seconds. I also added minced garlic. Tasty way to use my lettuce leaves.
