Here's my Gluten Free version. Used Bob's Red Mill GF all purpose flour and added 1/4 tsp. xanthum gum. Also added 1 tsp of pumpkin pie spice, just 1 TB sugar, 2 TB flax seed and 1 tsp vanilla. Enhanced it with flax seed for kids sake. Delicious. Everyone agrees it's delicious and I think it's the best version of GF pancakes, hands down, that I've made. Made recipe twice in 4 days it was so good!

Country Pumpkin Muffins

GREAT as a gluten-free option as well. Used King Arthur gluten-free multi-purpose flour instead of flour in exact amount suggested and use 3/4 tsp. xanthum gum. Otherwise followed the recipe although omitted raisins and walnuts as my kids are not fans of those but they loved the muffins! Quite moist and not dry which can be the case when using gluten-free flour mixes. This is a keeper!

Country Breakfast Casserole

Made 1/2 the recipe (for 4 servings) and it turned out a bit dry. The bread seemed to just be croutons on the top. I think it needed more eggs. But, it was tasty and had a lot of great ingredients for a filling breakfast. Will try hash browns next time.

Easy Granola Bars

Definitely easy! Mine turned out tasty but crunchy. I didn't use melted butter so that's perhaps why. I added orange-flavored cranberries, cinnamon raisin almonds, rice crispies, corn flakes, oatmeal, chocolate chips and the sweetened condensed milk. One of my two boys liked it. I waited about 10 minutes to cut them which was not a good idea--5 minutes would have been better.

Garlic Parmesan Orange Roughy

Nice and flavorful! My husband really liked it, too! However, I'm always concerned when I see mayonnaise AND butter together in a recipe b/c of fat/calorie content so I took out the butter and created my own dijonnaise along with the other ingredients and it was not greasy at all.

Cheesy Meatloaf

I consider this a "traditional" meatloaf recipe since it has a high fat content but it was good! My 7 yo had a second helping later after dinner was finished and he hardly EVER has seconds. I followed the recipe in terms of exact ingredient measurements except I only used 1 C. of mozarella cheese instead of 2. Also, I mixed in the cheese rather than layering it. It was still pretty greasy and I had to drain the grease off twice while it was cooking. So, I wasn't thrilled by that but the taste and texture were pretty good in the end. I served it with mashed potatoes and salad. Perfect comfort food and tasty, too! 9/1/10 Follow Up Made it again and this time added sweet potato puree and the kids didn't notice and loved it! In my oldest son's words, "this (meatloaf and mashed potatoes) has now become my favorite meal!"

Quick Crisp Snack Bars

Although one reviewer found it to be too sweet, I thought the amount of sweetness was fine. I used clover honey from Trader Joe's. Perhaps it's the brand/type of honey that makes a difference? I like the fact that there's protein, calcium and a natural sweetener rather than marshmallow found in traditional crispy treats. I'll try doing mix-ins in the future since my two boys really liked them!

Grilled Chicken and Pasta Salad

A winner! I used a roasted chicken from the market and cut up the white meat and prepared the pasta ahead of time but drizzled some olive oil on it to keep it moist. When I assembled the salad, I also added some carrots and artichokes. I chose Newman's Own Olive Oil & Vinegar dressing. We took it out on our boat for an evening picnic and it was a hit with everyone and it traveled well. The romaine lettuce was a good choice since it doesn't wilt easily like iceberg lettuce. Seconds were requested! I had some leftovers and it was just as good if not better a day later!

White Cake Frosting II

Needed to make a quick frosting because the container in my pantry which I'd thought was unopened had been opened and halfway used and never refrigerated. Not wanting to poison my guests, I had to find a recipe for white frosting for the star cupcakes I was making for our 4th of July party. This fit the bill! It was quick, easy and had a minimal number of ingredients. It tasted like decorator cake frosting and the little kids certainly ate it all up!
