Mozzarella-Stuffed Pesto Turkey Meatballs

Oh my these were a pleasant surprise! This recipe caught my eye because I'm looking for ways to use up my pesto, and I'm not gonna lie, I was also pretty excited about having an excuse to buy string cheese ;-) I only had 1lb of ground turkey so I used a little less than half of all the other ingredients. The oil from the pesto along with the milk and egg made for incredibly moist and flavorful meatballs. And really, the cheese in the middle is such a playful (and tasty) touch! I do believe this is my new favorite meatball recipe.

Tomato Zucchini Casserole

I really enjoyed this! I subbed mozzarella and added 1/2 white onion, finely sliced, with the zucchini layer. I used panko breadcrumbs for the topping and it was wonderful. This dish was easy to prepare, healthful, and attractive once cooled and sliced. Next time I will add more seasoning and make sure my tomatoes have a chance to drain on paper towels prior to assembly.

Oatmeal Raisin Cookies

1/2 recipe minus the walnuts = 27 perfect cookies! I snuck a (few) piece(s) of dough and was worried they would be too sweet, but after baking the amount of sweetness was just right. Since this recipe calls for shortening instead of softened butter I was able to whip these up in no time. A perfect sweet treat - I can't wait to try them warm with some vanilla ice cream :)

Spicy Cilantro Dressing

This is an interesting balance of cool and spicy! This was a great topping for my enchiladas, and I can tell that it would be wonderful on a taco salad as well. I plan to make this again using plain nonfat yogurt in place of the sour cream/mayo as another reviewer suggested.

Easy Hummus

My husband uses this as a base recipe for hummus weekly. I prefer it as-written, but he perfers it to pack a bigger punch and usually adds extra garlic and/or jalapeno. I love that this hummus does not call for tahini which, while necessary for an authentic hummus, is not something I have in my pantry.

Dill Veggie Tuna Salad

My husband and daughter loved this dish. I don't care for dill, but it is a nice alternative to traditional tuna salad. I made this in the morning and let it hang out in the fridge until lunchtime.

Oatmeal Peanut Butter Cookies

As a fan of both oatmeal and pb cookies I had high hopes for this recipe. Unfortunately, the end result didn't wow me. As-written they were middle of the road, crumbly, peanut butter cookies. Perhaps increasing the amount of oats would have given them a more fulfilling texture?

Jalapeno Rosemary Alfredo

This made a fantastic alfredo sauce. I used 2 garden-fresh jalapenos and a little extra cream/parmesan. The end result served over fettuccine with a grilled chicken breast and Jo's Rosemary Bread was truly restaurant quality. I can't wait to impress some dinner guests with this recipe.

Potato Salad Deviled Eggs

What a clever concept! I added a rib of celery and a small onion and seasoned with celery salt and pepper. Next time I will puree the filling mixture in the food processor so I can pipe it into the egg halves - spooning my finely chopped mixture in wasn't very neat. Thanks for a great recipe, this will be my go-to picnic dish from now on!

Scrumptious Strawberry Shortcake

We were disappointed with this recipe. When I invest so much fat into a dough, I expect it to be fantastic. Unfortunately the end result was flat, bland, and crumbly. The cakes did soak up the strawberry juices, but even then they didn't shine. It's too bad because the dough was easy to work with and retained it's shape well while baking (I used cookie cutters to make fun shapes).

Black Bean Brownies

I thought these were fantastic! I taste a hint of bean (starch is probably more accurate), but I expected that. They are guiltless, filling, slightly sweet, and chocolatey enough for those need-something-sweet-now moments. I soaked 2/3c dry beans overnight and boiled until tender with water and 1/2tsp instant coffee. I also subbed flax for 1 of the eggs because I didn't have enough. I added 1/2 cup mini semi sweet chocolate chips and topped the brownies off with coconut prior to baking.

Jalapeno Salsa

This salsa tasted like something we would get from our local Taqueria! The heat starts subtly and builds. At times it was too much for me - which is why I gave it 4 stars. My husband, on the other hand, embraced my challenge to eat spoonfuls of this and gave it a 5 after downing some milk :) We used 10 fresh jalapenos to 4 tomatoes with a medium sized bunch of cilantro. I initially used it to dress taco salads, but we ended up eating the majority of it with tortilla chips (and a healthy dollop of sour cream).

Spinach Basil Pesto

My husband, daughter, in-laws and neighbors all love this recipe! I subbed almonds for pine nuts and added spinach I reached my desired consistency. I've served this over pasta and also as pizza sauce (with a touch of cream cheese added). It's very quick and I usually have all the ingredients on hand.

Basic Cheese Polenta

The whole family enjoyed this! My 14 month old daughter kept asking for more and my husband loved the addition of the parmesan cheese. I refrigerated overnight, sliced into thin strips and baked for 35 min at 400F, turning with 15 minutes to go. Once baked, I served with meatballs and a thin marinara sauce. Next time I will reduce the amount of cheese, to tone down the saltiness of the dish as well as save some money, and add some black pepper.

Watermelon Rind Stir-Fry

I've been putting my watermelon rind in the compost so far this summer, but not anymore! I'm giving this recipe 5 stars for innovation and 4 stars for taste. My watermelon was a perfect texture (the submitter was spot-on when comparing it to zucchini), but still just a tad bitter. I added a little brown sugar at the very end, stirred in some roasted chicken pieces and served over white rice. It was an excellent - and very different - recipe, and I'm glad I tried it! The only thing I will do differently next time will be to simmer the rind a little longer to pull the last bit of the bitterness out. Oh, and make sure you use a high quality teriyaki sauce as it is the overwhelming flavor for the dish.

Burger Spice Rub

This rub was very easy to prep and took my ordinary turkey burgers to a whole new level! Cooked on my range, the brown sugar caramelized the outside of the patty. Yum!

Perfect Cheesecake Everytime

I had a hard time deciding on a rating for this cheesecake ... I give 3 stars for "average" recipes that I might or might not try again. This cheesecake could be spectacular - for someone who likes very light, airy cheesecake. My husband and I prefer a denser, NY-type cake. I knew this wasn't going to be incredibly dense by the ratio of cream cheese and sour cream, but I guess I didn't expect it to be SO very light. It was very easy to throw together and neither of us is complaining about having to eat the rest of it, but I won't make it again. So 4 stars for what it is: a light, airy, fluffy, tangy *slightly* reminiscent of a pudding dessert, but 3 stars for what it was in comparison to what we consider a cheesecake.

Philly Cheesesteak Sandwich with Garlic Mayo

This is a pretty obvious recipe, but boy did it get some rave reviews! My husband rated it 5 stars for taste and I give it 5 stars for simplicity! I've tried many recipes for doctored up mayo that were much more complicated than this. Now I'm asking myself why I went to all the trouble! I sliced the meat thin, grated the cheese and made the mayo the night before. The next day I came home from work, sauteed the onions/meat, piled it all on hoagies and minutes later had a fabulous, filling dish on the table.

Peach Upside Down Cake I

The cake was very fluffy when warm, but more of a coffee cake texture once cool. I added some cinnamon to the batter, but overall I didn't feel like this was anything special. Simply put - we ate the whole cake, but I can think of several other ways I'd rather use 1.5 sticks of butter.

Gnocchi with Sage-Butter Sauce

3 stars from me - 4 from my dinner guest. I'm going with my guest's rating because it was my personal preference (I love my pasta drowning in sauce) that makes this an average, instead of fanstatic, meal for me. My guest, however, does not enjoy overly-sauced foods, and we both agreed the ingredients and seasonings were spot-on.
