Chocolate Covered Cherries

I had never tasted a traditional chocolate covered cherry before, but my boss and mother in law both mentioned that these are their favorite candies sometime this past summer so I decided to go out on a limb and make these as Christmas gifts. Lucky for me both my boss and mother in law said they were perfect! I was unable to find cherries with stems (shame as it would have made dipping much easier!) but I did find a chocolate coating in a microwavable tray which made things a bit easier. One batch made ~30 cherries for me so I'll be sure to make a double batch next year!

Creamy Rosemary Au Gratin Potatoes

I don't usually cook food that is so indulgent, but Christmas dinner only comes once a year! With all the cream and cheese and rosemary (our favorite!) I hoped this would be fantastic, but it didn't wow us. The cooking time was spot on for 1/4" slices (I too used my mandolin), but I would have preferred them to be much thinner. I also think another cheese would have been a better pairing (grueyer?) as the chedder and bechamel didn't quite come together after baking.

Sicilian Sausage Soup

I accidentally used 1lb sausage and (intentionally) added a bunch of coarsley chopped kale at the end per another reviewer. I would have preferred some heat in this soup and will add spices next time (along with the kale and full lb of sausage). As written this is a 3 star for me, but I think soups are meant to be experimented with in a way some other dishes aren't (baked goods, for example). So after my modifications my family gave this 4 stars (5 if I pair it with homemade bread)!

Dutch Apple Pie with Oatmeal Streusel

I should have demonstrated some restraint when pouring the topping onto the apples, but I have a weakness for streusal and wanted to capture every last bit! Since I used it all I had a mound of crumb topping that was too dry atop my apples. Next time I would reduce the amount of oats/sugar a bit and keep the butter measurement as specified. I did not have issues with excess liquid; I leave my pies in tact overnight prior to slicing into them. It gives the juice a chance to soak back into the fruit!

Spinach Lasagna III

Simple and straightforward. I flipped the layering at the end to make sure the cheese was on top. I liked that it wasn't too saucy. This would be even better with the addition of some hot italian sausage.

Awesome Slow Cooker Pot Roast

This wasn't a huge hit at my house. The meat wasn't terribly flavorful and the sauce wasn't quite thick enough to be a gravy. I sliced the leftovers thin and reduced the sauce on the stove top and piled high on a hoagie for the hubs. He preferred the sandwich to the initial roast.

Homemade Peanut Butter Cups

I made the recipe as written and thought it was too sweet and not similar to the candy at all. Getting past my expectations that they taste exactly like the storebought kind this was a tasty treat, but I remade them a second time with some alterations to the filling (less powdered sugar and a touch of salt) to make them more familiar tasting. The use of crunchy peanut butter and graham cracker crumbs gives these great texture.

Kettle Corn

I cannot stop making (and eating) this popcorn! I think the recipe calls for a touch too much white sugar, but for a caramel corn you will need nearly double the amount of brown sugar. I also used the cooking method to make plain popcorn for my husband to doctor up with melted butter and garlic salt. I'm so happy to have found this recipe - customizable, homemade popcorn makes movie night so much more fun.

Chicken Thigh and Dumpling Stew

5+ stars from my crew! Chicken thighs are my favorite cut to cook with as they are super cheap and flavorful! I think from a preparation perspective there are easier ways to make this soup, but the end result was a huge hit; my husband woke up the next morning still talking about it!

Easy Key Lime Pie I

Wheat Crackers

This was a fun Sunday morning project for me and my toddler. I rolled mine super thin so they were more like crisps than Wheat Thins, but good nonetheless. A word of advice for others: be very generous when sprinkling the salt! I'll try this recipe again and again with different seasonings on top and maybe a touch more salt in the dough.

Microwave Baked Potato

On a scale of "good," "very good," and "great" my toddler voted this potato topped with mozzarella cheese and marinara sauce as "great!" This really saved me tonight when I had nothing prepared for supper and very little time to cook. I wrapped the potatoes in wet paper towels prior to nuking as previously suggested.

Key Lime Pie VII

Key lime is my husband's favorite pie. He said that the limey-ness of this recipe was perfect, but the texture was too soft, almost like pudding. I'm not sure what the texture is technically supposed to be like, but this recipe wasn't what the hubs was looking for so we compromised with 3 stars for the great flavor.

Homemade Tomato Basil Pasta Sauce

Homemade Laundry Soap

I've never been one to "love" a detergent so I took the plunge and purchased all the ingredients in bulk off amazon without testing this soap first. Lucky for me this mix washes my husband's work shirts and cycling clothes, my toddler's "play dirt, Mama" clothes, and my baby's burp cloths beautifully! I'll never pay the premium price for liquid detergent again.

Vegetarian Bean Curry

Fantastic! This was my first time using curry in a dish, and it was a big hit. I went easy on the black pepper because I didn't want it to be too spicy, but next time I'll be more generous ... and maybe add some cinnamon!

Quinoa Pudding

I'm giving this two stars because my toddler did enjoy it for breakfast this morning, but, for me, the lemon and apple juice was overpoweringly tart which made the raisins seem way too sweet in comparison. I tried eating the quinoa without the raisins, but it was simply sour. I also tried this hot and cold. It's a shame because I like all the components separately and really wanted to enjoy them combined together.

Shepherd's Pie VI

I wanted to make a shepherd's pie, but needed some help with the ingredient ratios and cook time. This recipe was perfect as a base. Next time I will double the amount of carrots and take some liberties with the potatoes (garlic, cream cheese, splash of milk) to better suit my family's preferences.
