Chicken Enchiladas II

I was looking for something mild, cheesy, and quick - and this recipe fit the bill. It was a definite crowd pleaser as written, but we do prefer it with cream of chicken soup and a full cup of sour cream without any milk.

Lisa's Easy Chicken

Great flavor, beautiful colors, and supremely easy preparation. After baking, I sliced the chicken lengthwise and tossed with the veggies, juice, some parmesan cheese and pasta for adults, and diced the chicken to mix with veggies for the kids. This would also be great alongside a crusty bread.

Herbed Rice and Spicy Black Bean Salad

I made this as-written for a side dish, and tried it again for lunch the following day. The dressing was tasty and we enjoyed the crunch from the celery, but it was heavier than anticipated and didn't translate as "refreshing" to us. I would try this again with a brown rice and maybe some halved grape tomatoes or a can of drained fire roasted tomatoes.

Mediterranean Quinoa Salad

Packed with protein and full of bold flavors - the whole family agreed this was phenomenal! I left the garlic in (there wasn't anything left to remove after simmering/resting) and eyeballed the dressing ingredients. Just a tip: after simmering the quinoa for ~15 minutes, remove from heat and then cover until all the remaining water has been absorbed. Then remove the lid and fluff for perfect quinoa every time.

Whole Grain Waffles

These were incredibly filling and the kids gobbled them up. The batter was thin to begin with, but after a few minutes the flax worked its' magic and the end result was perfect. It's hard to explain how they were so light and filling at the same time, but they were! I subbed whole wheat flour for pastry flour with no problem.

Delicious Avocado Egg Salad

I love this idea and my husband and I both thought the sandwiches were tasty. To me, both avocado and egg are ingredients that desperately want salt so I did add a bit more than specified in the recipe.

Quinoa with Veggies

This was a fine side dish. My 1 year old loved it which makes me a happy mama. The cumin gave the quinoa a wonderful aroma, but the taste was lacking a bit so I'll pump it up with some spices next time.

Pasta Primavera with Italian Turkey Sausage

I'm glad to have found this light and flavorful recipe since the warm weather is upon us. I subbed chicken sausage for the turkey sausage and diced tomatoes for the plums. While the pasta water came to a boil I chopped everything up and the sauce was ready as soon as the noodles were al dente. My husband would have preferred more spice, but both my daughters loved the dish as-written.

Summer Tomato Pie

I subbed the mayo for ricotta and used a parm/swiss cheese mixutre (inspired by the submitter's suggestion). The girls and I enjoyed this as a main dish. After the pie set it was easy to cut into bite size pieces for my one year old and the three year old liked the idea of eating pie for dinner. I'm excited to try this again with some garden fresh tomatoes.

Avocado and Tuna Tapas

This was a huge hit at my house! I subbed black olives for red bell pepper and had enough tuna salad for 3 avocados. I cubed the avocado and mixed it with the tuna for the kiddos, hubs ate his with a spoon, and I peeled mine and ate it without any utensils. The balsamic complimented the avocado well. This was the perfect lunch for a hot summer day.

Perfect Sesame Chicken

Three stars from my crew. I reduced the sugar to 1/2 cup and spread the sauce among nearly 2lbs of chicken. My sauce set a bit too much and the end result was nearing jelly in texture. The cooking method is great so if you are looking for a sweet main dish this is it!

Banana Sour Cream Bread

The texture of the bread was light and springy and coating the pans with the cinnamon/sugar mixture gave the outside a wonderful brown sugary taste. Half the recipe calls for 1.5 eggs so I used 1 egg and then a flax/egg substitute (1T ground flax + 3T water) for the 0.5 egg as it is much easier for me to use half of the flax than trying to use half of an egg. The flax also adds a slight nuttiness to the bread which was nice because I was out of walnuts! My two 9x5 loaves were done in exactly 1hr at 300 degrees so no trouble there, but I am only giving this 3 stars because the banana overpowered by the cinnamon. I will use this recipe as a base and add more banana because everything else about the recipe is spot-on.

Green Chili Stew

The broth of this stew is incredible! I lightly coated my stew meat with a flour/homemade taco seasoning mix before browning in my dutch oven. I also added ~1/4 cup of salsa verde that I needed to finish up. My only comment is that the potatoes, while needed, seem a bit out of place: a bite without potatoes tastes like a mild mexican stew - a bite with the potatoes tastes like a slightly seasoned plain beef stew. I will have to find a way to remedy this because we all really enjoyed this dish.

Corn with Jalapenos

Corn is a favorite at our house (probably because it's so sweet) and my daughters did eat this up, but to me the overwhelming flavor of the finished dish was butter - even with the jalapenos and pimentos. I normally adjust my expectations based on the ingredient listing, but I really didn't think 2T of butter would have such an impact on the end result!

Mediterranean Greek Salad

We can't get enough of this salad! I slice my English cucumbers and red onion paper thin with my mandolin and let everything mingle in the fridge overnight - tossing the feta in just before serving.
