Delicious Egg Salad for Sandwiches

Slow Cooker Thai Pork with Peppers

3-3.5 stars. This was very easy, different and has potential to be even better. I think some crushed peanuts and sliced green onions for garnish would go a long way with this dish. I added my peppers at the end so they would retain some crunch.

Molasses Bran Muffins

Oatmeal Whole Wheat Quick Bread

This was very small and crumbly - not appropriate for toast, but it was very tasty warm with butter and jam. I may double the recipe and try baking it in a loaf pan next time. The oats provide a great taste. I can't comment on how well this bread keeps because we finished it off in less than 24 hours!

White Bean Spread With Garlic & Rosemary

I added the garlic and rosemary to simmering beans (19oz cannelini was all I had), put the lid on and forgot about it for about 10 minutes. When I came back and removed the lid the smell was incredible! No need for the EVOO or salt/pepper. Fast, easy and filling.

Sesame Noodles

This is a great recipe that can be tweaked to fit any personal preference. I added pork to mine, increased the garlic and decreased the suger and oil slightly. I'd like to try this sauce with Soba noodles sometime!

Oven Baked BBQ Ribs

These were tender, but we didn't care for the sauce. In the future I'll use this same baking method with a more traditional bbq sauce for basting.

Apple Pie by Grandma Ople

This pie was beautiful and required minimal work. I preferred it the second day after it had a chance to mellow out in the fridge overnight (my Granny Smiths were pretty tart!).

Garlicky Baked Butternut Squash

This was great. It's 76 degrees and sunny with a cool breeze and I'm eating my first "fall" dish of the year. I'm going to have to try hard not to eat this all by myself. I'll definitely make this again (and again).

Roxie's Bran Muffins

This is a wonderful recipe. I used wheat bran instead of cereal, 2tbsp veg oil instead of butter and chopped up a frozen banana. I didn't bother plumping the raisins - I just mixed them in with the dry ingredients and added to all the wet ingredients, barely stirred the two together and baked. After exactly 20 minutes I had 12 warm, tasty, beautifully domed muffins. I'll be using this recipe often.

Layered Chocolate and Peanut Butter Bars

These were great! I threw them together at the last minute before going to a friend's for dinner and everyone gobbled them up. They aren't super sweet and the oats add a nice texture. I baked mine until the edges began to brown (25min) , let them cool and they slid right out of the pan. I'll definitely be making these again.

Lentil Quiche

This was a nice veggie dish. I sauteed the onions with some baby portabellas and omitted the tomatoes. Next time I'll add one egg, up the salt to 2tsps and put the cheese on top instead of mixed in with the other ingredients.

Italian Chicken Sausage Stuffed Portabellas

This was great! I used baby portabellas, half the cream cheese, added some peppers and did it all on the range. We ate this in tortillas (because I had some that needed to be used up), but it's also great by itself.

Slow Cooker Mongolian Beef

This was really saucy. I'd suggest doubling the meat & keeping the sauce measurements the same. I've never had real mongolian beef so I have nothing to compare this to. It tasted fine, but if I'm going to buy steak I'd rather use it in a recipe that "wow"s me more than this one did.

Strawberries and Cream Cake

I made a little extra whipping cream and omitted the cream cheese frosting. The sweetness of the cake and mildness of the cream complimented each other perfectly. I will make this again, addding a lot more thinly strawberries in between the layers.

Slow Cooker Pizza

While I did make this in the slow cooker, I have to agree with another commenter that this could easily be made in the oven (but who wants to heat up the whole house in August?). I browned italian sausage and pepperoni and drained the grease before mixing it in with the rest of the ingredients. I cooked it for about 2.5 hours. Total yum. I will definitely make this in the oven this winter - I imagine a layer of bubbly, brown cheese on top would taste fantastic.

Chinese Chicken Fried Rice II

Fast, simple and easy! I was able to throw this together in 10 minutes and sit down for a meal after a busy day at work while my daughter napped. I used shredded chicken (what I had on hand) and added some powdered ginger. Next time I may add some peas/carrots and/or try with another protein such as pork or shrimp.
