Cream of Chicken Soup From Scratch

A little heavy on the pepper and light on the chicken flavor. I do plan to try this again using pan drippings (didn't have any on hand this weekend) in the future. Thanks for the base recipe!

Whipped Cream

Good base recipe. I used 3 heaping tbsp sugar and added about 1/2 tsp ground cinnamon. Made enough to conservatively fill and top an 8" round cake.

Oatmeal Pancakes II

Perfect. I hate cleaning my food processor, so I just mixed the ingredients by hand. From the pantry to the table in under 30 minutes. Topped with cinnamon spiced whipped cream. This is fancy enough for Sunday, but quick enough for a weekday breakfast as well.

Quick Chocolate Chip Cake

I omitted the white sugar entirely, added some extra chocolate chips and used the coconut (toasted) on top of the cake instead of in the batter. True to its name, this cake was surprisingly quick to make. Since I halved the recipe, my bake time was 23 min.

Best Spanish Rice

This was great! I used 3/4 c rice, added enough chicken broth to the juice from a can of Rotel to equal 1 1/2 cups and threw in the tomatoes in place of the salsa called for in the recipe (salsa is highly coveted in my pantry since I rarely find my preferred brand on sale). I cooked until the liquid had been absorbed by the rice. This rice had wonderful flavor and will replace "Mexican Rice 1" as my go-to Mexican side dish.

Spaghetti Pie II

My husband and I were both pleasantly surprised by this dish. I thought it would just be a nice presentation of regular old spaghetti, but it was quite different! The noodle mixture is great and the cottage cheese definitely adds some flavor. I crumbled up some leftover meatballs, added a whole green pepper and forgot to add the sugar/oregano - seemingly without any consequence.

Mom's Secret Recipe Beef Stew

Cornbread and Sausage Stuffing

My husband and I prefer bread-based dressing, but I had some leftover corn bread muffins that I needed to use up so I made this. Naturally, the cornbread is the primary flavor so make sure you choose a kind you like (I used the Buttery Corn Bread recipe from this site). We didn't think this was anything exceptional, so we decided this deserved three stars for minimal prep and good flavor.

Cornucopia

My husband helped me make this (and I'm glad he did, I can see how making this by myself would have been frustrating!) and it "wowed" everyone this Thanksgiving! My mom was so impressed she made it the centerpiece of the appetizer table. This will be a yearly tradition for sure.

Smushed Apples and Sweet Potatoes

I cannot say enough great things about this recipe! It's fast, easy, simple, healthful and tasty. I've made it with both brown sugar and white sugar and can't tell much of a difference. Most recently I doubled the recipe, omitted the milk and GRATED the apples. To. Die. For. I do wish the final product looked a bit nicer, but honestly it tastes so freakin' fantastic that it doesn't matter. Try this recipe, I promise you won't be disappointed!

Yia Yia's Tzatziki Sauce

My husband and I love gyros and are always trying new tzatziki sauces at home hoping to replicate the kind we find in our favorite restaurant. This is the closest I have come so far, but I do wish the end results was a little thicker. I made this the day before and added a bit more salt. Yum! UPDATE 5/20/11: I made this for my husband's birthday and switched the ration of sour cream :: greek yogurt. The end result was closer to the thick consistency I was looking for.

My husband could not get enough of this! I was surprised by the texture of the dough - very elastic and easy to work with. Instead of grilling, I fried these up on my range. I served with Yia Yia's Tzatziki sauce and there are no leftovers!

Middle Eastern Turkey Dogs

Instead of "dogs" I flattened the meat and fried it up pseudo-gyro style. It was a nice change from our everyday dinners, but the cinnamon was a bit overpowering and it needed more salt.

Chocolate Peanut Butter Cups

Oh man, I shouldn't be allowed to make "Reese's" at home! I used semi-sweet chips because that's all I had on-hand, but will use milk chocolate in the future and add a touch more salt to the pb filling. I imagine these made in a mini muffin pan and wrapped in cute bags would be great holiday gifts!

Boiled Bagels

I was cautiously optimistic when I printed this recipe; it seemed straight forward and the reviews consistently commented on how easy it was. Well, I made these last night and I can't believe I waited so long to try these out! Nothing compares to the taste of freshly baked bagels. I made 8 good-size, relatively uniformly shaped bagels. My second batch was gummier than the first, but that was probably due to boil time. I do think these taste a bit "english muffiny", but perhaps that can be fixed by working more flour into the dough? I'll be trying these again soon to work on my technique and experiment with different toppings!

Easy Garlic Broiled Chicken

4.5 stars. I used a whole cut up chicken, baked before broiling as others had suggested and used 6 tbsp butter. We loved how this tasted. The wings (normally my least favorite piece) were especially good cold the next day. I'll definitely be making this again.

Baked Slow Cooker Chicken

After working all day and picking my daughter up from the sitter, it's rare that I have the time/energy to make a wholesome supper for myself. This recipe is a lifesaver. Cooked on low for about 10 hours using potatoes instead of aluminum foil. The chicken was falling off the bone juicy. Leftovers will be great for numerous recipes calling for cooked chicken. Next time I'll add a bunch of spices to give the chicken some more flavor.

Carrot Banana Bread

I loved this. It tasted similar to carrot cake, only healthier! I used half dark brown sugar and half whole wheat flour. Baked 12 individual squares for ~22 min.
