I'm a Quality Manager for a health and beauty care company, a wife to a commercial airline pilot, and mother to two wonderful daughters. Providing my family with healthy, satisfying meals is extremely important to me. Luckily my entire family is open to trying new foods - which we do often!
My favorite things to cook
I enjoy making components of each meal from scratch - noodles, breads, refried beans, seasoning mixes, etc. I also love to bake.
My favorite family cooking traditions
Christmas is a big cooking time for my family: scotch toffee and seasonal-shaped pizzas, and a big Christmas morning breakfast are a must.
My cooking triumphs
I created a chinese feast for New Year's Eve in 2009 that rivaled any local buffet! The menu included egg drop soup, crab rangoons, pork egg rolls, sweet and sour sauce, and general tso's chicken.
My cooking tragedies
There was an incident years ago with mushed up cauliflower posing as mashed potatoes that my husband still razzes me about...

Quinoa and Black Beans
We ate this over spring mix salad for a vegetarian dinner. My husband commented that it would taste great as a burrito filling along with some shredded chicken. The cayenne was masked by the sweetness of the corn, so next time I will up it to 1/2 tsp.

German Apple Pancake
This was incredible!! The presentation was beautiful and it tasted amazing. The outer edges were crispy and reminiscent of the "elephant ears" my parents bought me at the Iowa State fairs when I was younger and the middle was softer and just plain wonderful. I took the advice in the write-up and mixed the batter together the night before.

Tasty Orange-Oatmeal Muffins
Added 1/2t allspice and used cherry flavored craisins. The batter was quite thin, but they baked nicely. The oats gave them a heartier texture which, to me, overpowered the delicate flavor. If I made these again I would sub flour for the oats to see if they would stand out more with a lighter crumb.
