Maple Walnut Cream

so so yummy! texture was perfect but be sure to beat your eggs really well before you add the hot liquid or you'll have chunks. it was also too sweet for my taste. i reduced the maple syrup to 3/4 cup and next time i'll go to 1/2 cup. great recipe! thanks so much.

Healthy Banana Cookies

Excellent! Finally a cookie that makes me excited when my kids ask for another. These are great as is and would be just as good with any dried fruit you want to sub. The second time I made them I used raisins and added 1/2 cup chopped almonds and 2 Tbsp of maple syrup. I also substituted coconut oil and they were heavenly! A bit like eating baked oatmeal but they still give you that "I just ate a cookie" feeling. I might add a handful of chocolate chips next time just to convince my 8 year old that they are WONDERFUL cookies.

Three Ingredient Peanut Butter Cookies

So yummy and so fast. However, they were too sweet for me so the second time around I only used 1/2 cup of sugar and added 1/2 cup of ground hazelnuts and they were PERFECT!

Pumpkin Waffles with Apple Cider Syrup

Yummy! This was great. It made 8 good size waffles in my belgian iron. When I got to the melted butter part I realized I was out of butter and they were still scrumptious. So, if you are trying to cut the calories a bit just leave it out! No one was the wiser.

Nutty Pumpkin Muffins

Pretty good! It seemed like a lot of sugar so I reduced it to 1/2 cup plus added 1/2 cup of agave and left out the water. I used 1/4 cup oil and 1/4 cup of melted butter just because I was almost out of oil. I liked them and my kids liked them!

Spinach Lentil Soup

Very good! Left out the kielbasa and added the rice with the lentils. I used 6 cups of stock and 2 of water and it was a bit too salty for me. But definitely a keeper! My very picky 6 year old even liked it.

Spinach Brownies

SO GOOD! I sauteed the onion in 2 TBSP of butter for about 5 minutes and then added the spinach and cooked until it was wilted about 2 more minutes. I forgot to chop the spinach and it turned out just fine. I reduced the butter by the 2 TBSP but it was still really rich. I'm going to cut the butter by half next time. This was delicious with pasta, marinara sauce and crusty bread. It's a keeper!
