Wine Marinade

Super yummy!!! Didn't have any ginger, but did add just a pinch or two of red pepper flakes. Marinated pork chops for about 24 hrs, then grilled. Soooo amazing! The chops were tender, and the flavors were perfectly balanced. Keeper!

Easy Ham and Swiss Casserole

Great recipe! Ugh, I know I hate it when people rate recipes when they changed things, but I'm caving :) This recipe whips up really fast, and easy. I had leftover egg noddles from beef stroganoff the night before (somehow I always make too many noodles). I made a few substitutions for what I had on hand - milk for the white wine, cheddar for the swiss, and turkey ham for the ham. It came out sooooo good. I loved how the stuffing mix was a salty crunch, and the noodles were creamy. If you don't like salt, then make sure to use low sodium everything - ham, cream of mushroom, cheese, and stuffing all are typically pretty salty stuff. The only thing I would work on whem making again, is that it came out, well, soupy. Maybe less water, or let it bake longer? Despite the sloppy-ness of it, I am more than excited to eat it for leftovers today and tomorrow at work!

Hash Brown Ham Quiche

Delish! I often find quiche with usual pie crust quite heavy, so the hash browns were a great change! My boyfriend (28), and 2yo both gobbled it up like they hadn't eaten in days. My bf did pick out the green peppers tho, but that's an easy fix. This recipe can be a great base: add/subtract any omlette type fixings you have. I did leave out most of the butter & salt, just not necessary. This will become a regular at our house for sure!

Autumn Spice Ham Steak

So simple!!!! I only used half the butter, as the extra fat wasn't necessary in my non-stick pan. We only had Granny Smith apples in our fridge, but it still turned out amazing. Tasted great, not too sweet, not too salty. Quick and easy, with leftovers for lunches!

Easy Pumpkin Muffins

Holy cow! Is this for real? So simple I couldn't believe it. I used white cake mix, and it took about 5 minutes to mix up. The batter is thick, more like dough than typical cake, but turns out perfect. I will probably use an electric beater next time, my hand kept cramping up using a spatula. Cooked for 20 min, then topped with cream cheese frosting once cool. Pretty much the yummiest fool-proof pumpkin desert ever. 8/16/2012 - we make these 2-3 times a month now. I enlist the help of our 3yo for stirring, and then adding sprinkles for flair on top. Probably not the healthiest, but we love these for grab and go breakfasts. Hey pumpkin is a vegetable.. right? :)

Delicious Egg Salad for Sandwiches

Amazing!!!!! I don't even like egg salad, but made this by request of my husband. Instead of green onions, I used about 1/4 of a raw yellow onion very finely chopped (I hate biting right into an onion peice) and used Miracle Whip instead of mayo for a more tangy taste. We also added two pickles again finely chopped. Totally a keeper!!!

Spicy Lime-Cilantro Marinated Flank Steak

Yummy!! Great fresh and summery marinade! My husband and I are not fans of cilantro, so I omitted it. Also used dried versions of the other herbs. Marinated a cheap and usually tough cut of steak for about 2 hours in the fridge. Made the steak so tender and juicy I could not believe! 5 stars!!

Key West Chicken

Amazing!!! Made my really cheap chicken legs so tasty! I love how easy it is, very simple. I substituted lemon juice for lime juice, since that's what I had on hand. My husband is pretty picky, and has to have very flavorful food. He loved it!

Mom's Zucchini Bread

Seriously amazing! I had a pretty big zuch to use up and thought "hey, i'll try some bread" and never in a million years thought it would turn out this good! Made half into muffins so my husband could grab a few on his way out the door for work, and the other half as a loaf. It was all gone within a week! This is a keeper!

Strawberry Nut Bread

AMAZING!! I did change the recipe as another reviewer said. I substituted the oil for 3/4 cup of applesauce. I also did half white/half whole wheat flour. Only used 2 teaspoons of cinn, and added a pinch of nutmeg, and a 1/2 teaspoon of vanilla. Made half of the batter into muffins, and half into a loaf. They are moist, sweet, and just overall super yummy! Will make again!

Egg-White Crepes

Super yummy, and a simple recipe! I only had whole milk on hand, but then cut the veggie oil to about a teaspoon to balance out the fat content. The only fruit I had was apple pie filling, which was actually a delish filling. I've never made crepes before, and I must say that mind were a little thick... it must take practice! Will be making these again!

Fast and Friendly Meatballs

So simple, easy to whip together in minutes! I did add some garlic powder, and after they were up to 165, put them under the broiler to crisp them up. It was a little too plain for my hubby, who's a picky eater, so I may end up adding extra spices next time. Very good overall!

Chicken Hurry

Pretty good stuff, like lots of the other reviews, it was too sweet. I knew I should have cut back on the sugar. I halved the amount of onion soup mix, also added some garlic powder (didnt have any fresh), a couple splashes of red wine, and sprinkles of paprika and red pepper flakes. Also cooked on top of sliced up onions. Served on top of sticky rice. Yum! Will def make again!

Granny's Banana Bread

Pretty good banana bread. I cut this recipe in half, since I only had two bananas, and made into muffins (made about 12). I also put half white and half whole wheat flour in to up the healthyness. I like that there isn't any oil added, we're trying to eat right! My husband ate about 10 of them since I made them last night. I still prefer zucchini bread though.

Zippy Cucumber Salad

Definately not your typical cucumber salad! I love the zip of the jalepenos, but found out I'm not that fond of ginger (that's just my personal taste). I kind of missed that strong vinegar usually associated with cuke salads, so next time I'll use plain old white distilled vinegar. Oh- and LOVE the carrots.. overall this dish is yummo!

Cheese and Sausage Stuffed Zucchini

Pretty good recipe. I made a few changes that might have effected the dish for the worse. I used a relatively small zucchini (it fit into a 9x9 pan), so it got way overcooked and mushy. I couldn't find any plain pork sausage near me (I live in a TINY town) so I got Italian sausage - like brat insides, which was very salty. I think with the size of zuke I had, skipping the microwaving and baking for 20-30 min would have helped the mushy-ness. Also, I would have cut the stuffing mixture in half. Overall, very good, and will definately make again!

Stuffed Pork Chops III

Very simple stuffing recipe and yummy. The first time I made these chops, I WAY over stuffed them. The stuffing fell out everywhere and having too much of it made the pork too onion-y. The second time, I added just a spoonful or so into the chops and my previous problem was solved. The smaller amount of stuffing also made it so that I didn't even need to "sew" them back up with toothpicks (which were too much fuss for me the first time). Definately a recipe I'm keeping!

Merritt's Butternut Squash Gratin

Something different than the usual sweet mapley butternut squash! It took a little bit of time to prepare, which on weeknights I might pass up this recipe. Also, we thought there was a little too much onion, and too herby... we are pretty plain eaters. The cheesy topping though, was AMAZING! I would have never thought to put cheddar with squash! Yum, I will absolutely be making this again, with half of the onion & herbs next time :)

Southern Burgers

Very good base recipe for hamburgers. As others said, it's kind of a meatloaf burger (which my husband LOVES). I added two eggs instead of one, since I used previously frozen ground beef which never wants to stick together for me. Next time I think I will add in some cooked bacon and onion to make it even more savory.

Bella's Brussels Sprouts with Bacon

This recipe was OK - let me start by saying that this was our first time trying brussel sprouts and that I used frozen. I had gotten them cheap & from a store that doesn't normally carry them.. I thought "why not just try!". I sought out a recipe that had other ingredients that our family loves. The bacon, onion, and balsamic flavors were amazing. I cut down the balsamic to about half, because of what other reviewers had said. The only problem is that we simply don't like the bitter taste of brussel sprouts. I ate my usual serving size of veggies. My boyfriend had one bite. And our 3 year old had a few bites before deciding he didn't like it. I can't knock the recipe too much though, as I would loooove it for green beans. Just beware that it won't magically change veggies for ya.
