Slow Cooker French Onion Soup

I made a few modifications to correspond to what I had on hand. I did not have any cooking sherry, so I substituted for equal quantity of 1 part apple cider vinegar, 1 part water mixture. Used 4 large sweet onions and 1/2 of a red onion. used 6 cloves of garlic because I love garlic. I also subbed the cheese for Kraft's 4 cheese Italiano. It was very good, but I found it a bit too sweet. I think I will use 2 large sweet onions and 2 large Spanish onions next time I make this recipe. Otherwise, it was very good!

Fettuccine Alfredo V

Not bad, but not great. I has only 3/4 cup of 15% cream. I compensated with 1/4 cup of milk (I only have 1%). Even though I used those, I still found I had to add more milk because it was too thick. I did use freshly grated parm but I found it was way too cheesy and clumpy. This recipe is overall OK, but with some tweaking I think it could be great. Next time I attempt this recipe I will use 3/4 cup of 15%cream, 1/2 cup1% milk, 1 cup freshly grated parm and 1 cup of gruyere. I think the texture will be much smoother.

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I ABSOLUTELY love these cupcakes. they're moist and stay moist for a few days. I do agree with the others that the amount of icing is waaaay to much for the amount of cake made. I doubled the cake and kept the icing the same and I still could have made another batch of cake (doubled the recipe). The icing was simply delicious. I've searched long and hard to find a cream cheese recipe that was not too sweet and not too cheesy. This is definately it!

Homemade Pancake Mix

I don't know why, but I so much trouble in succeeding at making pancakes from 'scratch' that actually taste good. I usually resort back to the commercial pancake mix bough at the grocery store... But this recipe... AMAZING! Nice and fluffy, not that starchy taste. Just Perfect. I did add a pinch of salt as another reviewer recommended. Instead of the blueberry/banana version, I made a banana/chocolate chip mix. I will be using this recipe many more times to come! 5 stars!

Cream of Leek Soup

omitted the bacon. I only had 2 leeks on hand so I used 2 and I also used 2 large potatoes and 2 small ones instead of 4 large ones since I reduced the number of leeks. I found I needed more liquid than what was suggested so I had to add a little more stock. It was a little too potato-ey for my taste, but My boyfriend LOVED it!!! It's even better the next day!!! Will definately make again.

Spaghetti Sauce II

Delicious!!! I doubled the recipe but instead of using 4 cans of tomato paste, I only used 3.I also added 1 green & 1 red pepper that I passed through the blender prior to putting it in the sauce. I used spicy italian sausage for an extra punch. I removed the casing and made little meat balls and browned them lightly prior to adding them to the sauce. I used this sauce to make lasagna and put a meat ball on top of every serving. Let me just say that the aroma was exquisite and flavor amazing!!! 2 thumbs up.
