Asian Rainbow Trout

The store didn't have trout so I got sole instead. I used brown sugar and a dash red pepper in the soy sauce mixture. I also bumped up the soy sauce amount to a whole tablespoon instead of 2 teaspoons, what's one more teaspoon? Sole is a very delicate fish and cooked in this recipe, it just melted in our months. We will definitely make this again.

Company Liver with Onions

My husband and I wish that we could give half stars because we would have rather given this dish a 4 1/2 star rating. My husband likes liver and I merely tolerate it, but this dish was absolutely delicious. I followed the recipe to a T and the liver was so tender and the sauce was great over brown rice. This is a keeper!

Cream Cheese Squares

This was so incredibly easy and equally as delicious! I took the advice of a couple other reviewers and made a few changes. First I only used 3/4 cup sugar, added one egg, and about 2 tablespoons of orange marmalade into the cream cheese mixture. I could not image using that much butter so I melted about 2 tablespoons and then brushed it on the top crust. The sugar and cinnamon topping is a nice touch. These squares are definitely better after they've chilled a bit in the fridge. These tasty little squares will become a staple dessert!

Skillet Beef and Macaroni

I'm giving this a three because my husband and I are comprising on the rating. He gave it a 2 and I gave it a 4, so 3 it is. He thought it wasn't anything to write home about, kind of boring. I thought it was wonderful. The only changes I made was that I added a can of fired roasted tomatoes. I took the advice of other reviewers and cooked the noodles first, short of being done and let them finish cooking with the meat sauce. I happen to love chili mac type recipes and I thought this was very comforting.

Chinese Cabbage Salad I

This a wonderful change from a "traditional" coleslaw, which I don't like. I cut down the oil and sugar to 1/3 of a cup. I thought I had rice wine vinegar, but I had red wine vinegar which I used instead of cidar vinegar and it still turned out great. I added a tablespoon of sesame oil and toasted sesame seeds. I boiled the marinade for about a minute and let it rest and come to room temp before pouring it over the broccoli slaw mixture I got from the store. My husband was pleasantly surprised and is looking forward to "us" taking it to our next family gathering.

Savory Chicken Livers with Sweet Peppers and Onions

The overall flavor of the veggies and seasoning was tasty after I added another tablespoon of soy sauce and a 1/2 teaspoon of sesame oil, but neither my husband nor I liked chicken livers in this dish. I think tender pieces of beef or cut up dark chicken meat would have been better. I'm going to try it again with another type of meat.

Apple Bread

This was really quick, simple and very tasty. I wasn't able to find any reviews where people commented on what kind of apples they used. The only apples I had on hand were Granny Smith and I was worried that it would be too tart, but surprisingly it wasn't. You could still taste a slight tartness of the apples but it went well with the overall sweetness of the bread. Now I have another bread other than my traditional pumpkin bread to give out during the holiday season! This is a keeper.

Cabbage Jambalaya

I'm not sure what happened but this did not have a traditional "jambalaya" consistency. And how can a jambalaya recipe not call for cajun seasoning? I added it of course, but the overall dish came out a little mushy. The taste was like a cabbage roll, just without all the work of rolling each cabbage leave which is why I gave it a 3 and not two because I happen to like cabbage rolls. Unfortunately I will not be making this one again.

Creamy Rice Pudding

This was my first attempt at making rice pudding. My twin one year old boys love rice so I always have some made, so I deceided to make them a sweet treat tonight. This was wonderful and they gobbled it up. I did, however, have to add a little cornstarch to tighten up a little to give it a more "pudding" consistency. Other than that...perfect!

Oven Barbecued Beef Brisket II

How can something so simple be SO good! I've never made brisket before because I was always a little intimidated to do so, but when I came across this recipe and read the reviews, I thought "what could go wrong?" And nothing did! I made the recipe as it was written and my family loved it, it was so tender and moist and the sauce it made was very tasty. I added a little cornstarch to thicking it up.Other than that I thought the recipe was wonderful...meat good, sauce good...what's not to like! :-)

Zucchini Patties

I had a few zucchinis I needed to cook up and I saw this recipe. The ingredients are simple and most people have them on hand. I, too, added garlic and a few other misc spices in my cabinet. I took the advice of other reviewers and dredged the patties in bread crumbs. They were crispy and very tasty. Even my 15 month old twins liked them. Both my husband and I agree that they need some sort of dipping sauce to accompany them.

Spinach Stuffed Chicken Breasts

Even though we thought this dish was a little dry, I gave it four stars because it has potential. The feta/spinach mixture was great. My whole family prefers chicken thighs, so I think the next time I make this I will pound out boneless chicken thighs, spread the spinach mixture on top and then roll them up.

Fresh Strawberry Pie I

Two words...Cold and Refreshing! This is the perfect summertime dessert! I added cold water, sugar, cornstarch and jello at the same time and let it come to a rolling boil and then timed it for about 5 minutes, stirring frequently. My husband and my twin 15 month old sons loved it.

Chicken Enchiladas V

Yummy! I read a lot of reviews before I made this dish and I took bits and pieces of advice from several different folks. First, I took help from the store and shredded a rotisserie chicken. I doubled the sauce but instead of using an extra can of cream of chicken, I used Campbell's Fiesta Nacho Cheese. Then, instead of the teaspoon of chili powder to the sauted onions, I added a teaspoon of taco seasoning. Then, instead of the can of green chiles, I added half a can of Rotel to the chicken mixture and then added the other half to the soup mixture. My husband loved it!

Green Rice III

This was disappointing. I'm Asian so I'm always trying to find recipes to jazz up rice for my husband and I had high hopes for this one. I think when it comes to cilantro, you either love it or you hate it. I didn't put as much in it as the recipe calls for and we still didn't like it.

Spiced Pecans

Finally a spiced pecan recipe with the flavors that I've been looking for. My wonderful mother-in-law makes them during the holidays and she overspices them. I took the advise of another reviewer and added 1/2 teaspoon to the mixture. This was a nice find before the holidays roll around.

Honey Chocolate Pie

This was just okay. The consistency was like pudding and the pie was thin. My husband, who is the chocolate lover in the family, said it wasn't the worst pie he's ever eaten...I guess that was a compliment. :-)

Garlic Broccoli

The sauce was outstanding and so flavorful! The red pepper flakes gives this dish the kind of spice that is slightly delayed. It's a pleasant surprise. I used a combination of broccoli and califlower and this sidedish is a keeper!
